  1. I switched to sunflower seed oil for the first time in my life, from corn oil. Made a great difference because it is less thick and works for higher temperatures. It’s neutral and far easier to clean the pan. Btw I used organic FROM UKRAINE! So happy to have even one tiny effort to support. #TipOfDay #FrenchToast #Cooking #FoodPrep

  3. The long counter! Actually, I say long because it is of necessity long. But it is not wide. And this my #TipOfDay. Or you may look at how I make French toast. A lot of it. If I am going to do it, I go for a dozen or more pieces. #FrenchToast #Cooking #FoodPrep

    Since the counters next to the stove are limited in dimension, I have to group some small appliances by the 3 outlets, which reduces the space I need to cook things with a lot of ingredients or accessories. Photos show my solution is to get a 30” long heavy cutting board that neatly lays atop the stove burners. It supports the large electric skillet. I drag that skillet out if I will cook for 3 and also want to cook more for fridge or freezer.

    Abundance of eggs and lots of partial full bags of bread on hand, and away I go. 7 eggs make a dozen toasts. Add milk, vanilla, a dash of salt. Make the bowl to dip the bread in be a pie pan to fit 2 pieces of bread at a time. This is very basic and cheap food.

And why this way helps someone who may have dexterity issues or swallowing and choking risks or sensitivity to food
    textures.

    Most of the young caregivers we had had over the years for my adult son who is disabled have no idea what I mean by “really thin slices”. His favorite sandwich is made with tuna salad. If I tell someone to add a stalk of celery cut into very thin slices they have little idea of what I mean. Some have never prepared celery for anyone.

    I start with taking 1 stalk of celery and cut off the bunch stalk end and the top part with tiny branching stems and leaves. Then wash stalk. Celery is usually dirty once it’s in the grocery. Slices are thin, small crescent shapes pieces cut across the ribs. When at the lower part of stalk, cut the wide sections in half vertically the hold them together as you continue slim cuts. Otherwise wide crescents are a little too chunky to use this way. The first photo shows these steps. You can see how thin I ask the slices to be cut. (Yes I know I can use more of the scraps in my own cooking but I don’t ask caregivers to worry about this ) Second photo shows they are added to a bowl with sweet pickle relish, tuna and mayonnaise. Third photo shows finished tuna salad ready for sandwiches.

  11. CW: Food/prepping animal protein; pet begging?

    As a budget thing, I've taken to buying family packs of chicken leg quarters, breaking them down into drumsticks and thighs, removing the skin, and then packaging everything up in individual servings for the freezer (and freezing the chicken skin too for rendering when I have enough to make it worthwhile). I was in the midst of doing all this at my kitchen table when suddenly I realized I had an audience - my cat. I've done this prep routine any number of times without Mr Swayze showing any interest, but there he was tonight, pacing about my little kitchen around and behind me, definitely fascinated by all this raw carnivore-food aroma his human was releasing. It wasn't his full-on begging mode as he didn't vocalize (oh he's got a whole vocabulary of mrrts and meows, believe me!) but his level of interest was definitely clear. Fortunately the old gent is a little too arthritic to go table-diving, but I did hasten to get everything sealed up and stowed away safely before things got out of hand. 😹

    I prepped and made so much food today!

    I prepared the following for this week:

    • 700 ML of Italian tomato sauce packed with lots of kale and basil.
    • 650 ML of Jamaican Jerk Sauce
    • 700 ML vegan mung bean egg
    • 600 ML silken tofu chocolate and mixed berry protein smoothie
    • 90g of black rice
    • 90g of of steel cut oats

    @scremlin made:

    • 8 meatballs
    • 400g roasted broccoli
    • 200g grilled asparagus
    • 100g of whole wheat pasta
    • 150g of roasted peas
    • 150g of roasted edamame

    We also stocked up on fried firm tofu, tofu filets, vegan steak pieces, frozen veggies, and vegan tuna/salmon.

    I am so exhausted, but we should be good to have easier healthy meals all week! It's so much easier to make a healthy weeknight dinner decision if you've already prepped a sauce that you know is delicious and healthy. The way we do it when we're watching our weight is to pick two different kinds of cuisine and then just make a crap ton of two sauces that work for those cuisines, then we plan all our meals day of based on which sauces are available.

    This week will be Italian and Jamaican. I am so freakin' excited for jerk marinated grilled tempeh toasted sandwiches! I have been craving this for YEARS.

    -2 jars red onion maple marmalade
    -1 jar green pepper and red onion maple marmalade
    -Roasted root vegetables with oregano, salt and pepper and olive oil
    -Teriyaki Tofu sandwich filling slabs for 6 lunches
    -Bbq tofu chunks for 6 meals
    -6 pre-portioned breakfast oats with soy, flax, chia, hempseeds, natural pb( chunky), cinnamon and a date to top them off.
    And @WTL is making his vegetable soup now.

    So,of course, I want to order in for supper tonight!

  26. Good morning tooters. It was a 3c start today with a zero feels like! Rain is coming apparently but it’s a beautiful blue sky outside this morning & we’re heading to 19c.
    Still having moments of vertigo when I lie down & my sleep was again disturbed. I’m definitely out of sorts now that I’m home for some reason. Last night again as I was dropping off to sleep I jerked awake thinking someone was there in my room. I think after Chiltern I’ll book a remedial massage. Today though I’m going to take myself off for a walk. Make a couple of meals to add to the freezer & to take to Chiltern with me & drop in to see my sister considering it’s been a month. Should hopefully see my own children & grandchildren tomorrow 🤞🏼as both families are busy.
