  2. Daikon. A bit past ready actually. Already flowering and the top is getting woody, but the rest still tasty. I will pluck them but leave the biggest ones to go to seed for next year.

    They didn't super like it here but worth trying again with seeds from the ones that made it.

    Did the same with the sunflowers. All died last year except one that grew huge. We dried its head and stored the seeds. Raised seedlings from those this year and those are all doing well this year (so far).

    It's time once again to eat up Daihōon-ji's (大報恩寺) blessed daikon for another year of protection against sickness and disease.
    On December 7th and 8th about 5000 radishes are cooked and 10,000 meals consumed during the 'Radish Boiling Festival' (大根焚 'Daikon-daki').

  5. OK, here we go: this cucumber is as ready as it's going to get. I love how the sliced cucumbers look like little flower petals. 🙂 Everything gets salted, squeezed, combined, and then thoroughly squeezed again. Three kinds of sesame seed are added at the very end.

    The garden carrots never germinated, so this is is a store bought carrot. The cucumbers, daikon, and hakurei turnips are all from my garden; that's never been possible before this summer. 2/3

  6. It's been a highly unusual year: this is the first I've been able to grow hakurei or daikon in the summer. They are quick growing spring/fall vegetables, and In all prior years they died from the heat shortly after germination. I'm hopeful now that I can make tsukemono using entirely veggies from the garden. 1/3

  7. Uhhh, I went away and the daikon lept from the earth. With its friends. Anyone got a good recipie for a lot of daikon. I usually pick them small for stirfry, but a lot go to waste. Not a fan of them roasted.

    Potentially thinking if I made a decent fermentation I could trade some with the local homegrown food exchange.

  8. Spring Luxury
    This is what a luxury looks like. A combo of nature's gifts in a serving in .

    Sauge and cabbage sauted with , shoots and -na shoots boiled placed on top, now-rarely-found grandma's pickle atop.
    In case one may thirst for tongue-tingling punchy spice, peppers side-dished.
    -no-tō is bitter and removes "poison," -na tastes like , akin to and -na.
    Nothing like spring luxury.

  11. Considered a charm against evil (悪魔除けの大根), it made sense that these radishes would also help alleviate illnesses & diseases when consumed.

    The 'blessed' radishes were mixed with others in a great cauldron and fed to the congregation to promote health for the upcoming year.
