Spring Luxury
This is what a #spring luxury looks like. A combo of nature's gifts in a serving in #pasta.Sauge and cabbage sauted with #Japanese #dashi, #fuki shoots and #wasabi-na shoots boiled placed on top, now-rarely-found grandma's #umeboshi pickle atop.
In case one may thirst for tongue-tingling punchy spice, #homegrown peppers side-dished.
#Fuki-no-tō is bitter and removes "poison," #wasabi-na tastes like #wasabi, akin to #daikon and #karashi-na.
Nothing like spring luxury. -
Dressing is added last: 4T of rice vinegar, 2T of sugar, 1T of water, a few grains of dashi (Japanese fish stock), and a few drops of shoyu. Now we wait. 3/3

OK, here we go: this cucumber is as ready as it's going to get. I love how the sliced cucumbers look like little flower petals. 🙂 Everything gets salted, squeezed, combined, and then thoroughly squeezed again. Three kinds of sesame seed are added at the very end.
The garden carrots never germinated, so this is is a store bought carrot. The cucumbers, daikon, and hakurei turnips are all from my garden; that's never been possible before this summer. 2/3

It's been a highly unusual year: this is the first I've been able to grow hakurei or daikon in the summer. They are quick growing spring/fall vegetables, and In all prior years they died from the heat shortly after germination. I'm hopeful now that I can make tsukemono using entirely veggies from the garden. 1/3

Uhhh, I went away and the daikon lept from the earth. With its friends. Anyone got a good recipie for a lot of daikon. I usually pick them small for stirfry, but a lot go to waste. Not a fan of them roasted.
Potentially thinking if I made a decent fermentation I could trade some with the local homegrown food exchange.

One of the most reliable food source in zone 8b with cold wet winter and hot dry summer is #daikon. I let some of my daikons flower, then get a ton of seed pods from them. Daikon seed pods are edible just like reddish seed pods. They are spicy like mustard when eaten raw. The spiciness goes away after cooking. But daikon is 10x more prolific than reddish. #permaculture #naturalfarming
