En algunas cervecerías grandes, sobre todo a finales del siglo XIX y buena parte del XX, existía un trabajo bastante curioso: el de catador de cerveza.
Uno de los lugares donde esto se hacía de forma muy seria era en la cervecería Carlsberg, en Copenhague.
Allí no solo fabricaban cerveza: también tenían su propio centro científico, el Laboratorio Carlsberg, creado en 1875 para estudiar todo lo relacionado con la elaboración de cerveza.Eso incluía química, levaduras, fermentación… y también el sabor.
Porque por mucho que haya instrumentos, sensores o análisis químicos, hay algo que las máquinas no pueden medir del todo: cómo sabe realmente una cerveza.
Ahí entraban los catadores.
Su trabajo consistía en probar muchas muestras del mismo lote o de lotes distintos para detectar si algo había cambiado: un aroma extraño, una fermentación irregular, un amargor distinto o una cerveza que empezaba a estropearse.
No era “beber por gusto”.
Era comparar.De hecho, la mayoría de las veces ni siquiera se tragaba la cerveza.
Se probaba, se movía en la boca, se evaluaba y luego se escupía, igual que hacen los catadores de vino.Y aquí viene un detalle que suele contarse mal en muchas historias.
Lo del vaso de leche.
La leche a veces se usaba antiguamente para suavizar el paladar si se probaban bebidas muy fuertes o muy amargas, pero no era lo habitual en las catas profesionales de cerveza.
En realidad, lo más común era algo mucho más simple:▪️agua
▪️pan blanco
▪️galletas neutras o crackersEsos alimentos ayudan a limpiar el paladar sin dejar sabor.
Así cada cerveza se puede evaluar desde cero.Además, los catadores trabajaban con reglas bastante estrictas. Por ejemplo:
▪️las cervezas se probaban a temperaturas concretas
▪️las muestras se servían sin saber qué lote era para evitar sesgos
▪️se evaluaban aroma, espuma, color, cuerpo y sabor
▪️y todo se anotaba en fichas muy detalladasY algo importante: no era un trabajo continuo durante horas.
El paladar se satura rápido.
Después de unas cuantas muestras, distinguir matices se vuelve mucho más difícil.Por eso las sesiones de cata eran relativamente cortas.
Hoy muchas cosas han cambiado.
Las grandes cerveceras siguen teniendo paneles de degustación humanos, pero ahora se apoyan también en análisis químicos, sensores digitales e incluso inteligencia artificial para estudiar aromas y compuestos del sabor.
Aun así, el factor humano sigue siendo necesario.
Porque una cerveza no solo se analiza en laboratorio: también tiene que gustar cuando alguien la bebe.Y para eso sigue haciendo falta algo muy antiguo.
Un buen paladar.

Carlsberg CEO: russia has 'stolen our business'
#Carlsberg has cut all ties with its russian business and refuses to enter a deal with russia’s government that would make its seizure of the assets look legitimate, the brewer’s new CEO said today.
Carlsberg had eight breweries and about 8,400 employees in russia, and took a 9.9bn Danish crown ($1.41bn) write-down on #Baltika last year.

The russian state has taken control of shares in the russian subsidiary of #French food producer Danone, according to a decree signed by President putin on July 16.
The decree also said that the state is taking control of the shares in #Baltika Breweries that are owned by the #Danish multinational corporation #Carlsberg Group.
