Bei der #Weinverarbeitung setzen auch Bio-#Winzerinnen und Bio-#Winzer tierische Hilfsmittel ein. #Gelatine, #Eiweiß oder auch #Hausenblase vom #Fisch binden unerwünschte Schwebstoffe (#Trübstoffe), die im fertigen Wein zu Geschmacksfehlern oder Trübungen führen könnten. Eine lange Tradition hat es beispielsweise, gerbstoffhaltige #Rotweine mit #Hühnereiweiß zu klären. Dieses #Schönen, wie es in der Weinsprache heißt, geht aber auch mit #Erbsenprotein. Weitere im #Ökoweinbau übliche Alternativen zu den Hilfsmitteln tierischen Ursprungs sind das Tonmineral #Bentonit oder die #Algenprodukte #Kieselsol oder #Agar-Agar.

Schön wäre es, wenn Biowein automatisch vegan wäre, dann hätten wir viel mehr Auswahl.

Por si no sabéis qué hacer con tanta #ColChina en los #LunesDeCestas, aquí una receta sencilla que tal vez conozcáis. La ensalada china. 🤗

Como ingredientes básicos lleva la propia col china, #zanahoria, #agar-agar y según las fuentes, jamón de York o gambas. Pero en caso vegano podéis añadir otro ingrediente al gusto.
Se puede acompañar también de #maíz y unos brotes.

Y lo que le da la gracia diferenciadora es el famoso aliño blanco. Que consiste en un vaso de azúcar, otro de vinagre de arroz, dos cucharadas de aceite, no de oliva que es muy fuerte para esto, y una de sal.
Con las variaciones que cada cuál ajusta a su gusto.
Y eso sí, un buen rato de batidora o similar, para que quede bien blanquito.

If you’ve ever used an #agar plate to grow and isolate different #bacterial strains, you can thank Fanny Hesse (1850-1934).

Fanny Hesse worked with her husband (Walther Hesse) in Robert Koch's laboratory. Fanny was instrumental in introducing agar to grow, isolate and cultivate #microorganisms. This led to Koch using agar to cultivate the #bacteria that cause #tuberculosis in 1882 but Fanny or Walther were never mentioned or credited.
