"ヘタが上に反り返っているか、ということです。柿はヘタが実にくっついているほうが新鮮なんです。ほとんどのフルーツは、実の表面に穴が開いており、そこから呼吸しているのですが……。柿の場合はヘタで呼吸しているので、ヘタがだめになっている（＝上に反り返っている）と、実の鮮度も落ちているということになります。ですから、ヘタが青くて実にくっついているものを選ぶようにしてください。

我が家の次郎柿はヘタが全体的に黒くてかたいんだよね。それから、下から見ると見た目が良くても取ってから見るとヘタの下が黒くなってる。「ヘタ隙き」だし…。
それでも不味くはなくて、食後の口をすっきりさせるのにちょうど良いから食べているんだけど…。熟し過ぎてやわらかいのは甘くておいしいのだけど、口の中をすっきりさせるには不向き。それにしても今年は量が多い。剪定してないから成り放題なんだけど、急いで収穫しないと野鳥が口をつけて食べられなくなる。

ノササゲ…？野生の柿の実もずいぶんと熟れてきて、山全体がだんだんと秋の雰囲気に変わりつつあります。

The temple is now better known for its 'borrowed scenery' garden.
