Don't have the pics yet, but we tried two new recipes tonight in #YoshikosKitchen.
Super busy week because #k12 school year is winding down, #AdultESOL / #AdultESL is at the writing test part of the term, and this is the final week of the current #CyberSecurity course.
Oh, and because so many #USA Americans lack #CriticalThinking skills and / or don't have time to rest, much less watch (increasingly unhelpful) news, daily life is even more stressful than the usual background stress levels.

Wow. Didn't realize it has almost been 3 months since I posted something from #YoshikosKitchen. Here is a club #sandwich with ham, egg, lettuce, tomato, and of course toasted thin-sliced #Japanese sandwich bread.

We made #yakitori for dinner today. Had negima, other chicken, steak, bacon-wrapped tomatoes, as well as summer rolls. Ate it as it came off the grill, so don't have a picture of everything. Attached is steak, tomatoes, and sausage.

Next up in #YoshikosKitchen is the #udon we had for lunch today.
Sort of Kitsune udon, but with some twists --- like the tempura'ed jalapeño. Yoshiko tweaked the dashi just a little, and it was excellent.
The tempura was left over from last night. The inari wrappers were left over from a few days ago, when Yoshiko made inari zushi.
She made the broth this morning, boiled the #noodles, and put it all together with some chopped negi and shichimi.

Finally synced my photos with my computer, so time for some #YoshikosKitchen.
First is a #bento Yoshiko made for me near the end of September. She ordered the box from Japan. Very light weight wood, but reusable.
Anyhow, two-layer bento, with tamago yaki, tomatoes, pickled beets, okura, cucumbers and carrots in the bottom. Top has rice with salmon flakes, tsukemono, and those big beans that are slightly sweet.
It was delicious.

I'm a bit triggered by a recent podcast where the hosts disrespected Japanese cuisine. Basically, "I don't like fish, so I don't like #JapaneseFood". Like, WTF? Have they never heard of soba, udon, katsudon, tonkatsu, kare pan, yakisoba, yaki-freaking-niku, or okonomiyaki? Hiyashi chuuka? I might point them to #YoshikosKitchen for some educating.
Speaking of which ... eggplant mabo dofu attached. Yoshiko tweaked the recipe a little.

Off this weekend and next; we're between #AdultESOL terms. Class for next term is full, so looking forward to that starting up.
Yoshiko took today off, so we're going to have a fun day of doing stuff around the house, taking it easy, maybe running a few errands, walking the dogs, and #cooking.
I have a backlog of #YoshikosKitchen pics to post here. Will have more by tonight and will try to post some today or tomorrow.

Had a #Yoshiko original
#charcuterie for dinner today. Yoshiko made it all basically from scratch (save for the meat and cheese, of course).Ridiculously delicious. Also, we're almost 'Thanksgiving dinner' full. Only carbs were the flatbread crackers, though.
I include the #JapaneseFood tag because the potato salad and the carrot and tuna salad are Yoshiko originals inspired by traditional Japanese recipes. Also, the avocado recalls sashimi cuts.

Lunch was delicious today. #Yoshiko is practicing #nigiri #sushi again - it has been a while. She made this for lunch today, with some fish she got yesterday. I don't remember what the white fish were - hamachi and ??? - but I think the tuna is toro. And of course, got to have at least one shrimp.
She also made the ume and cucumber hosomaki.

We spent a couple of hours making #shogatsu dinner while watching #kohaku. Our biggest, bestest meal of the year.
In #Kanazawa, #Yoshiko, her mom, and her sister would spend much of the morning preparing a truly staggering amount of wonderful food. My job was to watch tv and drink beer with otoosan.
Now, we make #osechiryori (-inspired food) for just us, but still a family tradition worth keeping, wherever we are living.
We are very full.

We made #paella for dinner on the 25th. Not bad for our second attempt at the recipe we got in #Barcelona.
Unfortunately, we couldn't find proper paella rice, so made due with some other short grain that we had.

We also had some #tsukemono that #Yoshiko made. Slightly sweet daikon pickles and more traditional cucumber, cabbage, and carrot pickles.
#JapaneseCooking tsukemono are very different from USA style pickles.
Tonight, with the curry, the pickles were an excellent counterbalance to the spicy of the #curry.

Another #YoshikosKitchen because it has been a while.
#Bibimba, some of it homemade, some of it from the local #Korean market. Can't see most of the rice hidden underneath the egg.
It was freaking delicious.

We had some shrimp #okonomiyaki the other day. Was really good. Personally, I like it when you go light on the batter and a bit heavier on the veggies.

Finally checked with Yoshiko if I could post this one. (She said yes.)
When we moved to the USA, Yoshiko was excited to try all the new ingredients that were available to her.
She made this roll as a possible new item for the restaurant several years back. They added a few of her others (including a seaweed salad roll), but didn't use this one.
This sushi roll includes pastrami, asparagus, fried garlic, horseradish sauce, and sliced negi.

I'm off today (between #AdultESOL terms), so Yoshiko took the day off so we could have some time together.
One of many results: #ramen from #YoshikosKitchen. Not sure the best way to describe the soup - chuuka, maybe? Chicken broth with Chinese dashi. Probably closest to shio ramen, but not shio ramen?
Includes negi, memma, and chingensai, with powdered black pepper sprinkled on the top.
Delicious++ datta.

It has been a while, because we've been busy. But, finally have a new #YoshikosKitchen picture to post.
She is now in the kitchen at work, to help improve the menu. This pic is a candidate for the updated veggie #tempura appetizer. Some of the usual - renkon and eggplant; and some that I think are less common - asparagus and red bell pepper.

Spring break is almost over. Looking forward to seeing students and coworkers again. Not looking forward to state testing, though.
Pic is a new dish that Yoshiko made. As I understand it, it was partly inspired by both #JapaneseCooking and #FrenchCooking. Doesn't have a name yet. Almost vegan, but not quite. Delicious.

#Spanish class went well last night. Only about 4 weeks of classes left in the term. Hard to believe.
Today is day 5 of spring break (from M-F job). We are going to hang out at a coffee shop for a while (and study Spanish) before having #yakiniku for dinner.

Great day yesterday. We got a lot done, and it still felt like a vacation day.
Didn't get the pasta or bread made, but we did make sanuki udon and curry pan.

#AdultESL is between terms, so I have two weekends off! I love teaching the weekend classes, but I have a M-F job also. The 2 weeks off after 8 weeks of classes is a welcome break.
Wife took today off, so we're #baking / #cooking:
* bread
* pasta (new machine)
* udon
* sconesIf there's any time left, I'll start prep for the next term. Always little tweaks to make to plans and materials, even after ~6 years of teaching the class.

Yoshiko made some more side dishes, though, I would happily have this for dinner with some rice.
She wanted the pieces to be larger, so made the second batch.
Includes carrot, chicken, gobo, renkon, mushrooms, konnyaku, and the snap endo. Dashi is special, but you'd have to ask her what's in it.

Bento for my lunch. Yoshiko is working on various recipes for new bento, so I get to take a lot of good stuff for lunch.
Includes kimpira gobo (carrot and gobo - burdock root, IIRC), spicy broccoli stems, grilled shishito, and kabocha (or another squash?).
Delicious and very healthy.
Unrelated, but is bento English enough now that it can be made plural? Bentos?

Yoshiko's #MaBoDofu is incredible. Tofu, ground meat, some veggies, the spicy sauce.
For a while, mabo dofu was tied with lasagna for my favorite dish. Not any more. (Unless I can convince Yoshiko to spend a few months perfecting a lasagna dish?)

We had #ChaWanMushi as part of our #Shogatsu feast. It was really good.
If you don't have time (or don't want to / can't steam on the stove), you can make this in the microwave.
