Das Wasser zum Betrieb der Mühlen kommt über bis zu 120 Kilometer durch sogenannte Quanate in die antike Stadt. Diese Konstruktionen sind zum Teil 5000 bis 3000 Jahre alt. Bis das Wasser die Stadt erreicht, liegt es aufgrund des notwendigen Gefälles 30 bis 40 Meter unter der Oberfläche. Ein riesiges Tunnel und Treppensystem erschließt dieses Wasser.
