    Silken Tofu Chocolate Mousse

    Gluten-free, dairy-free, eggless, and vegan.

    Ingredients

    Toppings (optional):

    β€’ 3.5 oz. (100 g) roughly chopped dark chocolate
    β€’ 1 package (12 oz.-340 g) organic silken tofu
    β€’ 2 tablespoons maple syrup
    β€’ chocolate shavings
    β€’ raspberries
    β€’ blackberries
    β€’ fresh mint

    Instructions:

    1. Melt the chocolate in the microwave (or a double-boiler) in 30 second intervals, stirring each time, until the chocolate is melted. Set aside to cool at room temperature.

    2. Meanwhile, place the silken tofu and maple syrup in a food processor and blend until very smooth. Add the melted chocolate and blend until well combined.

    3. Scoop the mixture into 3 ramekins or glasses, and refrigerate for 30 minutes.

    4. To serve, garnish with chocolate shavings, raspberries, blackberries and a sprig of fresh mint.

    Leftovers will keep in the fridge for up to 3-4 days.

    1/2 gala apple
    1/2 tsp ground (SriLankan) cinnamon
    1 tsp tapioca starch
    3 tsp brown sugar
    Mix & microwave above in the covered bowl for 3.5 mins.
    Put it in 2 oven-safe bowls, top them with 1 tbsp rolled oats & 1 tsp brown sugar each, bake at 200℃ (400Β°F) for 10 mins.
    Add frozen cherries & oatMilk iceCream & a fresh mint.

    Enjoy!
