Kann man Joghurt🐄 auch aus Gras🌱 herstellen?

Genau das versucht das neue Projekt GrassToGurt (G2G). Mithilfe von Hefe, die auf Grasschnitt fermentiert, wollen Forschende künftig Joghurt herstellen. Durch den Einsatz von Hefe anstelle von tierischer Milch könnte der hohe CO2-Fußabdruck von Milchprodukten vermieden werden. Außerdem blieben von Grünland geprägte Kultur- und Erholungslandschaften sowie die regionale Landwirtschaft unabhängig von der Nutztierhaltung langfristig erhalten. Das Ziel von G2G ist es, den hefebasierten Joghurt mit ähnlichen Eigenschaften wie sein tierisches Pendant herzustellen. Das ITAS analysiert, wie Verbraucher:innen den neuen Joghurt wahrnehmen.
