Except 27.1 never happened. Apple skipped it outright, straight from 27 to 27.2.

Turns out the Duo ships with 27.1, and that build is full of code referencing a phone nobody has announced the last details of yet. Push it through the normal beta program and someone finds the strings within a day.

So the rest of us jump to 27.2 instead, and the same skip happened all at once across iPadOS, macOS, tvOS, and watchOS.
