El origen de las tapas españolas es incierto, con raíces populares andaluzas del siglo XIX y leyendas reales que se remontan al siglo XIII.
La teoría principal sugiere que surgieron al "tapar" copas de vino con jamón o queso para evitar que entraran moscas o arena.

Otra versión dice que los orígenes tendrían lugar en Cádiz, durante una visita del rey Alfonso XIII.
En uno de sus descansos rutinarios, el rey pidió una copa de Jerez.
El viento soplaba fuerte ese día y el camarero encargado de servir la copa, temiendo que el vino se llenara de arena, colocó una loncha de jamón sobre la copa a modo de "tapa".

El rey Alfonso XIII pidió explicaciones sobre el aspecto de la copa.
Tanto gustó la idea, que los siguientes vinos los pidió con la misma "tapa" para la copa.

Bendito descubrimiento.
PERO ...

La teoría más aceptada por los historiadores gastronómicos es más práctica y menos romántica.
En el siglo XIX, sobre todo en Andalucía, era habitual “tapar” las copas con pan, jamón o queso para proteger el vino de polvo e insectos.
De ahí vendría el término “tapa”.
Con el tiempo, esa pequeña porción pasó de ser simple cubierta a convertirse en acompañamiento habitual, y después en seña de identidad cultural.

También hay quien remonta el origen a épocas anteriores, incluso a Alfonso X el Sabio en el siglo XIII, con la idea de acompañar el vino con algo sólido por razones de salud.
Pero, de nuevo, estamos en el terreno de la tradición más que en el de la prueba documental.

Lo que sí es seguro es que en el siglo XIX ya existía la costumbre de servir pequeñas porciones con la bebida, y que en Andalucía —especialmente en ciudades como Sevilla y Cádiz— se consolidó como práctica social.

Así que… ¿es exactamente así como pasó?

En el siglo XIX, sobre todo en Andalucía, era habitual “tapar” las copas con pan, jamón o queso para proteger el vino de polvo e insectos.
De ahí vendría el término “tapa”.
Con el tiempo, esa pequeña porción pasó de ser simple cubierta a convertirse en acompañamiento habitual, y después en seña de identidad cultural.

También hay quien remonta el origen a épocas anteriores, incluso a Alfonso X el Sabio en el siglo XIII, con la idea de acompañar el vino con algo sólido por razones de salud.
Pero, de nuevo, estamos en el terreno de la tradición más que en el de la prueba documental.

Lo que sí es seguro es que en el siglo XIX ya existía la costumbre de servir pequeñas porciones con la bebida, y que en Andalucía —especialmente en ciudades como Sevilla y Cádiz— se consolidó como práctica social.

Así que… ¿es exactamente así como pasó?
Puede ser.
