- When the wort reached ambient temperature, I topped it some of the fresh #birchsap that would act like a wild yeast starter inşallah

I'm mentally nitpicking and finding fault with almost every single toot I'm seeing and have been for like 2 hours. Why am I feeling so contrary?

I think it might be that lunch #beer. Beer makes me feel great for an hour and then like garbage for the following six. #Vodka doesn't do this but #brandy and #wine do, red much more than white. #Tannins?

The difference appears to be due at least in part to acclimation to tannins, as the acclimated group produced more tannin-binding salivary proteins than the non-acclimated group.
