Blueberry syrup from fresh berries was super easy. Don’t know why it never occurred to me I could make it. I have been looking for it at grocery stores for maybe 8 years now and never found it. #Cooking #Blueberries #Syrup #Fruit #Syrup

Looked at various recipes and settled on this for 3 cups. Thickens more in the fridge but also freezing small portions. Important tip at end of recipe (which I put in first comment)

2 cups washed blueberries
13/4 cups water
2 cups sugar
1 tbsp cinnamon
2 tbsp lemon juice
For thicker syrup, mix 2 tbsp cornstarch with about 1/4 of the water and mix in saucepan, add rest of the water

Heat over low heat to almost simmering, then raise heat to almost boiling, covered. A potato masher get more blueberry juice out of mix.
About 15 minutes total cook time. Add cinnamon and lemon juice after it's done cooking. Hand immersion blender after cooking makes it smoother.

I thought sugaring season was over so I went to take my taps out and there were four gallons of sap in the buckets! Recent freezing nights must have restarted the flow. It will make light amber syrup but I don't care. It's still a bonus. I can use it to sweeten cocktails or make candy. I'm grateful to nature for this gift. #maple #syrup #sugar #trees #nature

It's only been twelve days since snow was flying but my maples have quickly gone from gushing to dribbling. I'll be lucky to get a pint of syrup from my sap. But I'm not complaining.
