    This meal was an interesting experience. Kind of similar to when I first tried Japanese curry. A western dish adjusted to Japanese tastes and then exported again to be eaten by us. 🔁

    I had ordered Vegan Hayashi (demi-glace) Sauce (デミグラス風ソース) at Kokoro Care Packages without really understanding what it was meant to be. Wikipedia says demi-glace is a rich brown sauce in French cuisine that is made with veal stock. Accordingly the recipe suggestion was to make this with beef - but further down it said you can substitute with your favourite vegan ingredient, so that’s what I did, I used smoked almond and sesame tofu.

    I almost used the whole pack as instructed in the recipe on the Kokoro website but then 750 ml water seemed a lot. Using my rudimentary knowledge of Japanese I managed to extract from the cooking suggestions given on the bag that this recipe was for six portions! Quickly I removed some of the water again and only made half of the amount. Now I can use the second half to make Japanese Hamburger sauce. Nice! ☺️

    So, what’s my verdict? We liked this and if you are fan of dark meat with mushrooms in a brown sauce, this is a great way of producing a satisfying meal that’s not taking a lot of time.

    There’s even cocoa in it! 😊

    The last round of our chicken schnitzels from last weekend were eaten today. I also made some mushrooms seasoned with soy sauce, sake and sesame oil, and fried more pak choi. Those were put on the rice together with furikake. And of course there was soup. I really like these meals, no matter how many or few items there are, they are always very satisfying.

  19. I made farfalle in a sauce with fresh tomatoes and spinach leaves and added not only tofu sausages but also smoked tofu cubes. The latter was a safety thing, just in case the sausages were not that great. And what can I say, it was the right decision. They weren’t awful but definitely not that great. 😅 The rest of the meal was fine even if I had to fight my son for some of the lactose free mozzarella. 😉

  22. It‘s pancake day! In this household this means Besan Chilla (chickpea flour pancakes) with spiced roasted potatoes. 😋😋😋

    There was a whole grated courgette in the pancake dough and I guess the chickpea flour should cover the need for protein. I also finally tried an original Indian chilli powder from Namauste that had been sitting in my cupboard for a year, boy, it‘s hot! But good! My husband (who likes very spicy food) absolutely loved it.

    Another instalment of our popular Friday mix and match dishes. I hesitate to call this particular setup proper Japanese cooking but it certainly has a lot of Japanese elements. 😅 We had:
    - Miso soup
    - Smoked mentaiko (cod roe)
    - Sansho teriyaki sardine jerky
    - Sweet and sour white cabbage
    - Blistered padrón peppers
    - Caramelised onions
    - Sesame tamagoyaki
    - Rice with various toppings, I used chirimen (tiny fish) and shichimi togarashi

    This was done family style where you have several bigger dishes in the centre and a personal rectangular plate to gather them on, rather than a gazillion of small bowls for each eater.

    All made possible due to a recent extracurricular delivery from the Kokorocares single items shop. All the fish items came from there. 😋

  28. I felt like soup so I made spicy carrot soup (seasoned with tempered cumin, coriander and turmeric powders, and some chilli powder too). I added caramelised onions, as this was the perfect opportunity to have them gently fry away next to my soup preparations. They really need some time. And because I’m into green chillies at the moment there also was a small serving of blistered Padrón peppers. 😋

  36. I hadn’t made a nice pilau rice in ages so out came the ready made Indian spice mix my friend gave to me a while ago. I added carrot, courgette, onion, garlic & ginger paste, and yellow bell pepper. I also put in some soy mince only to remember afterwards that I had some other tofu thing in the fridge: tofu chunks masala. Got that out too, fried it and added soy cream. It had a good consistency but there was quite a bit of this typical “German curry” taste that I find boring, so I will not buy it again. Finally I blistered a couple of green chillies and fried Pak choy leaves to add some juicy components.

  37. I hadn’t made a nice pilau rice in ages so out came the ready made Indian spice mix my friend gave to me a while ago. I added carrot, courgette, onion, garlic & ginger paste, and yellow bell pepper. I also put in some soy mince only to remember afterwards that I had some other tofu thing in the fridge: tofu chunks masala. Got that out too, fried it and added soy cream. It had a good consistency but there was quite a bit of this typical “German curry” taste that I find boring, so I will not buy it again. Finally I blistered a couple of green chillies and fried Pak choy leaves to add some juicy components.

    An unusual weekend for us, eating different dishes on each day. I had got humongous plaice fillets at the market and my husband and I prepared them with boiled potatoes, fractal cabbage (Romanesco broccoli), and a honey mustard sauce that I hadn’t made in years.

    I was a bit unhappy that the sauce drowned out the delicate taste of the plaice but my boys were like “the fish doesn’t taste of much, so the sauce made it better”. Ignoramuses, the two of them! 😆

    But it was a good meal and we reminisced a little about our time in Winchester where we used to eat this sauce quite a lot with fish and broccoli.
