    Have you ever heard about black cardamom? I hadn’t until recently. It’s used for Ethiopian spice mixes and makes them smokier.

    This weekend my husband and I made Doro Wat (Ethiopian chicken stew) again and because I had mostly run out of my ordered Berbere spice blend I had to make some more from scratch.

    I used a recipe from the web and compared what I got with the original one. Somehow they were not similar enough. The bought one was smokier and also something else was missing, a hint of what I would describe as German curry spice - which turned out to be ground fenugreek. The lack of smokiness was explained by the fact that the recipe said green cardamom. Luckily I had recently bought the black stuff for another spice blend (mekelesha) and realised that this was the missing element, so I think the person who created the recipe probably didn’t know about black cardamom. I added a teaspoon of ground down black coriander and there we were, a really good Berbere spice blend had been created.

    The tomato and green chilli salad added a nice tangy and hot kick, only the lentils were a bit boring but that was fine. We ate everything with the homemade injera style bread (it’s not the real deal but it works for us).

  3. I made vegan Mapo tofu and it was VERY close to the meaty version we all loved so much. OK, I had forgotten that the recipe I’m using requires oyster sauce so I simply omitted that. It was still perfectly fine. (I have an untried recipe for vegan oyster sauce but completely forgot.) Soon I’ll also try a vegan Mapo naso (with aubergine instead of tofu), I think that will be a winner too. 😋

    I bought some new Japanese style rectangular serving plates and a few more small bowls. Can’t wait to start using them.

    My son requested German pizza, so we made two tarte flambés together. The dough was excellent, he did a great job at kneading it. And I finally figured out the right settings for my oven so the dough gets crisper faster. I think this was the best one so far. 😁

  5. I recreated my cabbage dish that was such a hit with my guys some weeks back but somehow it didn’t have quite the same impact today. This often happens despite carefully noting down what I did. I think it’s that “eating something new”-effect, and then the next time we know it already. But it was still good and I will keep it in my repertoire. 😋

    My son and I prepared today’s meal together. 👌🏻

    We had pan seared tuna steaks, two types of spinach, and salad with some more of the carrot and ginger dressing.

    The spinach on the left was wilted in oil with onions and shaved garlic. The one on the right was blanched, washed in soy sauce and seasoned with miso, mirin and vinegar.

    The tuna was a bit neglected by us and I realised too late that the recipe actually asked for miso and sesame coating. I ended up putting gomasio on the yet unfried side in the pan which was fine. I could have fried the steaks a little bit less but they were still quite juicy. Both of us enjoyed our food!

    Easy food today: pasta in a lemon cream sauce with a piece of hot smoked pepper salmon accompanied by a very simple salad with a carrot/ginger/miso dressing.

    The greatest fuss was to create the dressing in the blender (took all but 10 minutes 😆) but it was absolutely worth it. I had found this on the Justonecookbook website a while ago and had been wanting to try it for quite some time. I should have made it earlier, it’s really refreshing.

  8. Another well working vegan adaptation of a dish that would normally feature meat: soy mince in a tomato and spinach sauce. Homely and easy with loads of nice spices like coriander seeds, paprika, cinnamon and turmeric. There’s also a green chilli in it, yum yum!

  9. Another Monday, another meatless meal. I recreated a dal that I tried quite some time ago and remembered as being bland at the time. It certainly wasn’t today. I guess I didn’t add three (deseeded) green chillies last time and maybe not quite so many fresh curry leaves.

    I wanted to serve this with fried paneer but the cheese I used to buy for this has disappeared from our supermarket across the road. So I grabbed some fresh spinach instead and wilted it in some oil with garlic which worked pretty well. My co-eaters were once again happy.

    The recipe for this comes from my Vegan
    Richa cookbook (but I replaced the mung dal with masoor dal as I didn’t have time for soaking).

    More aubergine, this time Moussaka style, cooked by my husband. I had some frozen lamb mince which is perfect for this dish. I love the notes of cinnamon too. 😋

    Today with rice and a simple green salad. Yesterday we had flatbread and some Greek delicacies with it.

    Another Friday, another table full of small dishes. We had yuba osuimono (clear soup with tofu skins), sesame tamagoyaki, broccoli with garlic sauce, dressed cucumber slices, fish and rice. Furikake was used too but I somehow forgot about tsukemono, the pickled dish. 🤷🏼

    The broccoli recipe came from The Woks of Life so it is technically Chinese but of course it went really well with the other dishes. 😋

    I really like this way of eating as you can taste each dish on its own.

    Cutting corners by buying ready made things. Potato dumplings and Bratwurst were fine, the red cabbage was a bit too sweet straight from the jar. I seasoned it with pork lard, a sour apple, a little rice vinegar and marjoram. After that it was much better. 😊 (Next time I’m going to make my own again.)

  13. Goodness me, what a faff with the taste layer for these vegan “fish fingers”… It just did not want to stick!

    In theory the tofu pieces should have been covered nicely (with puréed capers, gherkins, mustard and flour) before I dunk them into the beer dough but it was not happening. In the end I gave up and fried them with a mini amount.

    I got out the two open bottles of my Caribbean pepper sauces and spiced my tofu fingers up. Yum, big improvement already! Then I had the idea that I could simply use my tasty mix like a dip too and most of it disappeared in no time that way. I’m sure that left over tablespoon will be used up tonight on somebody’s sandwich. My boys were surprisingly happy with tofu in beer dough 😀

  14. My son complained that the food had the “wrong” colours: the carrot was purple, the bell pepper orange and the egg had turned green in this egg fried rice. 😳

    The egg was indeed weird (but tasted fine), I think it happened because I fried the colour releasing carrot first.

    This meal was a bit lacklustre as I was cooking in a rush, so we used some of my friend’s lovely hot sauces again to give it more sparkle. 😋

    My husband cooked us a very tasty German Gulasch (meat stew with red wine) this weekend. Today with potato dumplings, yesterday with Spätzle. I’m not sure how we managed to have some leftovers at all but the roasting dish is actually quite big.

    BTW here you can see the difference of daylight and (yes, unprofessional) artificial light very well once again. To me the food does not look very appetising at all on the second photo… 😅

    We tried a new dish today, Mapo Nasu, which is minced pork and aubergine (nasu in Japanese) in a spicy sauce. I used a fast and easy to follow recipe from No Recipes and my son commented afterwards that this was the best aubergine he ever had (I actually thought he might not eat it). 😁

    The one thing I struggled with for a moment was the instruction to use rayu which was explained as chilli oil. I thought I didn’t have any chilli oil left until my gaze fell onto a tiny bottle in my fridge that said la-yu. It clicked in my head and I realised that this was exactly what I was looking for as L and R sounds are interchangeable in Japanese. 😅

    When I looked at the ingredients I saw sesame oil, so it’s actually sesame oil instead if ordinary oil and that’s why this turned out being so delicious!

    Next time we have this dish we’ll try to make it vegan with vegan oyster sauce and soy mince instead of pork.

    Steamed fish Chinese style. I don’t have a bamboo steamer but my old metal steamer inset does the job nicely. ☺️

    This so easy to prepare and also yummy with a simple sauce of mirin, soy sauce and olive oil.

  18. The last of the white cabbage was eaten today with Japanese curry and fried coated koya tofu.

    I love koya tofu, it’s not at all what I usually expect of tofu. It comes dried and you have to rehydrate it before using it. You squeeze the pieces like sponges before cooking to get rid of excess water but they are still super juicy - and they don’t look it at all after frying. 🤩

  19. Today’s food is called “I forgot that I needed to do the shopping”. 😬

    Originally I wanted to make a meat dish but I’m glad I didn’t as what I got in the end was much better.

    We had rice with a smoky tofu/soy mince mix and sweet and sour white cabbage.

    For the soy mince/tofu mix I got out my “secret” ingredient, a bottle of liquid smoke. It was so good, I couldn’t stop trying it while cooking. The sweet and sour cabbage complemented the rest of the food really well and my son was so happy with all if this that I got told I need to prepare this again exactly as it was today.

  20. On this Meatless Monday we had a simple wafu pasta dish from the @kokorocares website: garlic shichimi pasta (spaghetti with olive oil combined with garlic, konbucha and shichimi togarashi). As that is mainly carbs I decided an insalata caprese would go nicely with it, and it did. 😄
