A plaice fillet in a beer batter with mushy peas and air fried potato wedges.
Trying out things and not doing enough research can result in food that’s good but not what it‘s supposed to be. The wedges were fine but the batter did not quite do what it was meant to do, puff up at least a little. The fish was still delicious (my guys were quite fond of it), just not quite what I expected. For next time I know now what to do differently.

Potatoes and egg with Frankfurt green sauce.
A couple of weeks ago I found a frozen herb mix for the green sauce in our local supermarket and decided to try it out. They were fine and we all ate with appetite but fresh is far more fragrant so I think for our next iteration of this dish I‘ll wait a bit until the herbs are in season again.

When cooking plans don‘t work out! 🫣
This weekend we prepared Ethiopian style Doro Wat with Injera “bread” (and added Timatim salad). We made this before.
Today things were fine (first three photos) but yesterday I struggled big time with a new (and apparently more authentic) recipe for injera bread. So much that I eventually stepped out to buy some wraps to eat instead. 😒
I had bought proper teff flour and as per instructions I put it in a bowl to ferment for 48 hours. Well, it somehow was not resulting in a good dough; or maybe frying in oil didn’t work out. Whatever it was, I had to come up with a better plan for today. So out came the recipe I used last time which gave us injera that were like pancakes. I swapped out quite a bit of the suggested flour for teff but otherwise followed the recipe. Here you fry without oil and lo and behold they worked like a dream. They tasted less pancakey too which is a clear improvement. Next time I’ll try using even more teff.
The timatim salad was spicy! There was some of the wonderful berbere spice mix in it (that is also used for the doro wat) and half a deseeded green chilli. 🥵🤣
And the doro wat is just sensational 🤩 every single time.

Did I say already that my late mother’s potato salad recipe simply is the best one? 😅
Every time I make it I have to think about all those times when we lived abroad and my mum was ordered to prepare this for us on her visits, in the very same bowl I‘m still using. Eventually I managed to extract a vague recipe from her, I‘m so glad I did!
She would usually fry some fish with it but to be honest many things fit and I‘d even be perfectly happy to eat the salad on its own. 😋

Another day, another interesting looking dish 😇 :
A piece of tofu with oven grilled cabbage and rice, and also a bowl of egg drop soup.
We had half a cabbage left and I wanted it to go. I thought this recipe looked promising. You steam the cabbage pieces first and then cover them in a glaze made of gochujung and many other ingredients before placing them under the grill in the oven. It was not bad but the pieces could have been a little smaller and also steamed for slightly longer.
The soup was a simple affair of dashi broth with a beaten egg that I streamed through a spoon with holes. Very effective and yum.

Many plates and bowls were out again. And that despite a light headache all day. 🤕
I had:
- rice with soy glazed bonito flakes 👌🏻
- gyoza (that didn’t get fried properly 🙄) with a sesame yuzu dressing 👌🏻
- mushroom salad with a sesame dressing 👌🏻
- pickles of course 🥱
- a piece of grilled mackerel 😓The glazed bonito flakes were an instant hit with my son (he who hated anything dashi at first 😄) and me, while my husband liked the mushrooms best.
I found the mushroom salad recipe at @justonecookbook and the bonito rice topping is from @epicurious.

My son is always particularly happy when I make this oven dish with peppers, tomatoes, feta cheese and an egg sauce. I call it a frittata as it is like a quiche just without a base.
There is a bit of vegetable cutting necessary but essentially this is very easy and goes in the hot oven for only 25 minutes. Serve with some toasted bread or rolls.

These are the Hungarian meatballs my husband made yesterday for our main meals this weekend. Next time we’ll use somewhat less dill but other than that this was a good dish.

Okonomiyaki time!
I made three of them with slightly different toppings. Mine had red pepper and shiitake, the boys had mostly bacon. We each topped them whichever way we wanted but I think all of us used mayonnaise, okonomiyaki sauce, spring onion and bonito flakes. I also used black sesame seeds and some of my rather smoky homemade shichimi togarashi. 😋

Because Pixelfed does not (yet?) what I want it to do, here another food post on this account.
Yesterday we had a Japanese style meal with many dishes. Most of this was easy.
We had miso soup with a few bonito flakes which changed the taste completely, that was yum.
Then some grilled mackerel from a tin, wakame salad (bought frozen), pickled beets and ginger, and a little kimchi just because I found the tin in the storage drawer and I thought it would go (it did!).
The one thing that took a lot of time and effort was the Inarizushi (tofu parcels) which I had bought on a whim. I filled them with seasoned sushi rice mixed with chopped shiitake mushrooms. Preparing the rice was fine but opening the tofu bags to stuff them was really stretching my patience and a lot of them ended up with holes. 😬 But funnily enough when we were eating the parcels they stayed together very well, much to my surprise, and they tasted really nice. I don’t think I ever had inarizushi before, not sure I will ever volunteer to make it again, but it was a nice dish that I would eat in a restaurant at any time.
Taking good photos was also a challenge as it was such a rainy and dark day and my kitchen (which normally gets loads of daylight) needed lights on. The last photo is with daylight only and the colours look much better but I was too hungry to retake all the other ones. 😅

I had to try out Indian style fried chicken again. We had it together with an old “friend”, a chickpea and aubergine curry. Yum, yum!
My new frying pan is able to fry these covered meat pieces without any sticky business and I can really cut down on the oil to get them crunchy like this. 👍🏻
