We were standing across from Cobh in the park on Haulbowline Island to photograph the fireworks display over Cobh on St. Patrick's Day this year. With a camera on a tripod, timing a fireworks display is basically an exercise in optimistic guesswork. When you buy the ingredients for corned beef and cabbage after St. Patrick's Day you get a good bargain. I do all the vegetables separately in the skinned broth. The beef was simmered in. But I find you have to add in a little bit of that. Corned beef fat cap just to keep things legit.
