Speaking of #cooking #spices and #spiceblends I also just tried some slow cooked pork ribs in this Turkish seasoning and oh my word it is a winner. This makes about a half pint.
grind:
4T cumin, black pepper
10 bay leavesblend with:
1T+ greek oregano, paprika, sumac
1T cilantro, sesame seeds
2t peppermint
1t cayenne
½t cinnamonPro tip: Talenti ice cream is not only quite good, the plastic containers have a screw top and are perfect for storing spices.

I tried this hawaij seasoning recently and am pretty happy with it tho I may tweak it in the future.
grind together:
1/3c coriander, cumin seeds
3T green cardamom
1T black peppercorns
4 cloves
2T turmeric
1 sm cinnamon stickMakes about a half pint.

Notes: Kashmiri mirch, easily available in IndoPak grocery stores, is my favorite all purpose relatively mild ground chile powder. Great color and flavor with a little kick but really I call that 'Yankee hot.'
Mexican and Greek oregano are two completely different unrelated plants. Only called the same because some say the flavor is similar. (I am not one of those people.) Greek is in the mint family, while Mexican is a verbena. Both are essential staples for me.

One of my hobbies is collecting #spices and making my own
#spiceblends. Here is my favorite: my adobo.Every culture has a go-to blend that is easily personalized. In points south of here that's called adobo. This is mine but you can change it any way you want to suit your own tastes. This is made from all pre-ground spices:

3T cumin
2T paprika
4t garlic
1T coriander
2t onion, kashmiri mirch (or some mild chile)
1t Mexican oregano, thyme, turmeric
