To bed early, and thinking over the day's food, and tomorrow's.

I've been bored with using #spaghettiSquash as if it were pasta so tried something different given one on hand – spaghetti squash and sausage casserole.

Came out very tasty, and we'll have it for supper tomorrow. I had a sample as a side this evening as it was supper for one (liver & onions! Yum)

Lots of recipes online for it, though I mostly just winged it, so can't offer a reference recipe that is very similar.

1 #avocado, sliced
2 cups Spaghetti squash, cooked as us recommended
2.2 oz (about half a "tube") #Chorizo, cooked as us recommended
Sprinkle of #Tajin spice

Spread out the squash after cooking to cover the plate, gently sprinkle the Tajin to your liking, sprinkle the Chorizo, then place the avocado.

The squash and Chorizo complement each other perfectly, as #squash is famously bland, and Chorizo is famously concentrated #spice! The tajin adds a bit of sharp sour tang, and the avocado helps smooth all the flavors together.

I recommend it!

I was craving some #spaghettiSquash today, but none of mine were ripe... so I decided to do a little experiment.

Picked an unripe one (hadn't turned yellow yet but the rind was quite firm), scooped out the seeds and fried a bit of it up.

The flesh was green and extremely firm, but it tastes AMAZING. Once cooked, it does have the fibrous quality of ripe spaghetti squash, and it got tender quick.

Would recommend.
