There is no 'spaghetti Bolognese' in Italian cuisine so I've taken the liberty of creating a 'spaghetti lenticchie', adapted from an old in-house spag bol recipe cooked up during my student days.
Carrot, onion, celery, mushrooms, garlic, passata, splash of vegan red wine, tomato purée, mixed herbs and a 400g tin of green lentils, rinsed and drained, spaghetti. Served sprinkled with nutritional yeast.
