What a top morning! Up early—preheated the oven, got the dough in the Dutch oven just after 7, and had it all cooked and ready before 8. Took our leccy bikes for the hilly 12km ride to the tiny local Sunday market. Grabbed our weekly veg from Juan and some scrummy cheese from Luis. Beat the rain and made it home before 10. Now the fire’s alight—it’s time to relax…

Inside is fine. Maybe slightly undercooked, because I panicked when I saw the top burning and took it out slightly early, but still absolutely edible and tasty!

I has a good chewiness to it, and I'm really happy with the flavour.

I'm disappointed about the outside being a bit burnt. It's not so burnt that it's not enjoyable. I know some people enjoy that level of toasted, it's just not what I was going for.

I mean, it doesn't look bad, and I got an open crumb, but it didn't rise enough. I'm pretty sure that's because I had so much trouble shaping it.

I'm still happy. Finally, I got an open crumb, and the texture and taste are both good!

#SourdoughSunday recently a friend gave me a white flour starter. I bake almost exclusively with a whole wheat/rye starter and make a loaf that is 50/50 whole wheat and white flour. How many starters are you maintaining?

For me, all white bread feels like candy. I usually only bake one loaf a week and I'm worried about killing the white starter. Also what to do with all the discard.
