Shoofly pie was a favourite when I was growing up - still is today! :-)
My Mom used to make it and as a kid I would help prepare the ingredients, cutting margarine into flour and brown sugar.
Though I asked, she never gave me a recipe (I think she did it from memory), but I managed to find one in an old Mennonite cookbook when I was at University.
Here it is, going mainstream!

Case in point, #ShooflyPie.
Online recipes present essentially a definitive version, dissolving baking soda in hot water, then adding to a molasses mix.
A version I found in the “Seems Like I Done It Thisway,” a collection assembled by an Oklahoma Home Ec teacher, had a version using hot coffee.
This matters because when cooking a meal, of course a farm kitchen will have hot, black coffee on hand, not necessarily hot water. (Think pre-plumbing.) Unlike water, coffee adds flavor, too.
