I realize it's a distilled spirit, but with “aka” (red) in its name, a dark red bottle, and a dark red label, I was really surprised when the pour looked like water.
I have no idea how to describe the taste, other than I really liked it, more than other shochu that I've tried. This is easy to drink neat and a real pleasure.

I drank the purple labeled shochu (Noka no yome) in my (now closed) favorite izakaya. Made from purple yakimo. He brought it out and I loved it, but stupid me didn’t get any info. He never brought it out again.
Went to the Akarui Noson brewery and saw the label, like seeing an old friend. Sampling it was like hearing the old friend speak. We are reunited and it feels so good.

Today I want to introduce you to a spirit you probably haven't heard of so far. It's a type of Japanese Shochu, which is known somewhat internationally. This one, however, is a rare kind: It's Kokuto Shochu, made from brown sugar and almost exclusively produced on the Amami islands off the coast of Kagoshima in Japan.
"Wait, sugar....isnt that rum?", you might ask. The answer is: kind of, but the details matter. While rum is made from sugar cane juice or molasses with baker yeast, Kokuto Shochu is made from brown sugar, water and koji yeast - the one used for shochu or other fermented products in Japan. This gives it a very special flavor, akin to rum, but way more mellow! Unfortunately, it is not too abundant outside of Japan (and the good brands are usually sold within the country). However, if you get your hands on one of those, it's worth trying!
Here's a small cocktail you can make with it, I call it a KB-Quiri.
2 oz Kokuto Shochu
0.5 oz Banane du Bresil Liqueur
0.75 oz Lime JuiceShake on ice, strain into a coup and enjoy!

I return from my walk through the old growth cedar forest of Yakushima. I review the day’s MLB box scores. I see that the Rockies gave up 7 runs to the Dodgers in the top of the 9th to squander a 9-4 lead and lose 11-9. I drink lots of local Shochu.

Back from Kagoshima, 焼酎天国. Enjoying Meijiguragenahu, a sweet potato shochu only available at the Satsuma Shuzo Shochu distillery in Makurazaki. It’s 74 proof shochu that you put in the freezer and drink neat. I drank this from the cut glass I bought at Senganen. #Kagoshima #shochu #senganen

This has to be the most uncool label of a spirit in history. My husband has just acted out the imaginary conversation of the employees (wearing gum boots) and the shacho (also wearing gum boots) deciding on this name. 「社長、カッコいい名前ですね!」#shochu

Tonight's Tipple: Nekomata Koshu aged rice shochu from Chiyomusubi Shuzo in Shimane. This is the one shochu I keep on hand in 1.8l format at all times. It's sweet and rich and chestnutty.

Tonight's Tipple: Yakiimo Kurose Beni shochu. This is made from roasted sweet potatoes, which brings some mellow sweetness to the mix. It's a lovely warm-up worth drink oyuwari (with hot water).
