  1. Last week, we talked about #Sencha, and today we’re focusing on another green tea: #Bancha.
    The term bancha refers to both a type of #tea and a category. As a type, it’s an unshaded green tea harvested later in the season (second, third, or fourth flush), made from larger, more mature leaves (from the third leaf down). These leaves are processed like Sencha but result in a tea with larger, crushed leaves and a dull green color.

  4. When we talk about #Japanese green #tea, we’re faced with an enormous variety of types. So, what are the different kinds of green tea? Today, let’s talk about #Sencha 煎茶.
    Sencha accounts for 60% of all green tea produced in #Japan. It refers to an unshaded first-flush tea (first harvest), where only the first 2-3 leaves are picked during spring (late April to early May). The processing method for Sencha was codified in 1738 by Nagatani Soen and is still used today.

  5. As the most widely produced tea, Sencha comes in countless varieties of flavors, aromas, and forms, depending on the region, climate, soil, cultivars, and processing style.

    Another type of Sencha is #Shincha 新茶, or "new tea." This is a special tea sold immediately after harvesting and processing (not sealed and refrigerated for year-round sale like regular Sencha). It retains all the freshness and aroma of the young spring leaves.

Je pense que je vais faire un fil sur les thé japonais, comment ça marche, pourquoi des différences dans les thés alors que c'est la même plante, tout ça, parce qu'à force de tout lire dessus, je connais plein de choses sur le sujet et c'est super intéressant (de mon point de vue de meuf en hyperfocus là-dessus). J'ai même l'astuce ultime pour profiter du thé même quand on a un manque de fer 👀

  17. I used to just be a tea-drinker, earl grey, daily, because if it was good enough for my favorite captain, it was good enough for me. Then I got into yerba-maté because a company I worked for partnered with *that* company, and I always end up trying to get to the DIY or trad version of any vice I take on. And then I tried to make coffee for my Starbucks loving ex, but I wasn't able to woo her away from the union-busters, and got myself into coffee instead. Now I'm dabbling with #puer, #oolong, #sencha, and other blitz-brew or #GongFu style teas. I feel like I've got all of my major cultural caffeine bases more or less covered, and all of them work well for me for different vibes.

  22. Ostin vahingossa puoli kiloa vihreää teetä. Luulin, et ne oli pussitettu valmiiksi kuten edellisessä paketissa oli. Tämä oli kokonaan irtoteetä ja sain todella huokeaan hintaan.Teekaupassa tämä olisi maksanut 4 kertaa enemmän.

  26. I made some cold brewed Sencha green tea in the fridge, which I brewed over the course of 48 hours.

    I love, how the tea leaves swirl in the bottle, when agitated.

    The tea has a strong sencha aroma, is slightly sweet and unami and has absolutely no adstringency or bitterness.

    It`s an amazing summer time drink. Now all I need is some summer time weather...

    Japanese #sencha teas have a special flavor that I can't find anywhere else.
    They remind me of the sea and the pine forests next to the beach.
    This product is one of my favorite. The delicate umami meets sodium mixed to roasted hazelnuts.

    1st 🫖 at 75°C for 30s
    I will be posting pictures from 2nd and 3rd infusions too.

    My guess that you need 1) a right pot - so leaves' material would have enough room and would be submerged 2) correct ratio of leaves to water for that pot

    When dealing with pots for Japanese teas in a traditional way it's not only #kyusu but #testsubin too, which is likely more suitable and more available for 1L+ volumes.

    As for cold water brewing it's easier though - any vessel would fit. And I recommend to try cold #SenCha

    Il neige beaucoup dehors et le ciel est gris, et je suis enfin à la fin de mon sencha asatsuyu récolté au printemps, qui m’a accompagné à travers l’été et l’automne de cette année.

    La plupart du temps, je prépare ce sencha comme si c’était un gyokuro (voir mes notes du 14: silvan.cloud/@gersande/1093426), mais j’avais besoin d’un peu plus de chaleur aujourd’hui. Le résultat est une infusion un peu plus vive, avec un caractère légèrement amer, mais ça m’aide à me réveiller!

    Avec ce thé je m’affronte finalement à mes tâches du vendredi. J’ai eu une grosse semaine et j’ai une grosse journée devant moi avant que je ne puisse me reposer cette fin de semaine.

  34. L’heure du thé!

    Ce matin, je continue sur le thème du sencha. Voici un thé bio récolté en mai de cette année de la région Miyazaki (sud du Japon), du cultivar Asatsuyu. Le thé est à la fois chaleureux et floral, très réconfortant pour le premier matin gelé de novembre.

    J’ai préparé ma première tasse avec une eau pas très chaude (environ 70 degrés C), pour obtenir un résultat plus naturellement sucré. Je vais probablement augmenter la température de 5 ou 10 degrés pour les 2e et 3e infusions!

  35. Tea time!

    I did not sleep well and my pain is ... not great today, so this morning I wanted something a little stronger than usual.

    Organic teas from Japan are starting to really become very complex and tasty, so today I am trying an organic sencha (green tea) that is a little more on the herbaceous and umami side than on the floral/sweet side.

    I really love it! It reminds me of summer, and considering it's been rainy and foggy for three days straight, I can use more sunshine in a cup right now.

  36. @nomadbynature matcha is too mutch hassle to prepare (imho, I use shaker - like i fast make it but still -too mutch hassle). But decent everyday green tee as #sencha or #bancha are still easy to buy and easy to prepare.
    @CSB use leaveas. Really. Leaves taste are so mutch different and better.

    J’ai retrouvé un de mes thés préférés! Je le surnomme « mon thé des montagnes », car je l’amenais souvent avec moi quand j’allais faire des randos dans le nord.

    Voici le guricha zaira, une variété d’Ishitobi, au Japon, qui me rappelle un peu d’un mélange entre un très bon kukicha et un très bon sencha.
