  9. I chickened out of a group walk this morning because of the wet weather forecast. It brightened up in the afternoon so I walked across to Cragside. Quite a change from a couple of weeks ago when they were turning people away, hardly anyone was there. I tried the scone of the month, savory cheese and marmite! I loved it but I expect it will divide opinion.

  13. I took a trip to Cragside and tried out the National Trust's new scone of the month. It was a nice walk with autumn colours and the calm day giving clear reflections in Tumbledon lake. The scone of the month is "red dragon", served with onion marmalade and grated mature cheddar. Personally I'd have classed the " onion marmalade" as a chutney, but pedantry aside, it really was delicious.

    For anyone better at baking than I am they publish a recipe.

    The 100% best order in which to put the fillings in a scone is.
    - cream first, AND
    - cream second.
    You can make things even better by putting cream on the top, leaving the only possible improvement as.... removing at least one half of the scone.

  28. The prospect of spending 15-plus hours as an election officer Tuesday meant I desperately needed to go to bed early Monday night. And yet I was still busy in my kitchen late Monday, because I could not let my fellow poll workers down by showing up without scones.

    I’ve been relying on variations of the recipe Mark Bittman documented in the New York Times back in 2010 for well over a decade. But ever since I adopted the civic-minded side hustle of being a poll worker–which in Arlington means arriving at the polling place around 5 a.m. and then not leaving until after 8 p.m., sometimes after 9–I’ve realized how important snacks can be to that line of work. Especially when they’re homemade baked goods.

    Fortunately, this second breakfast is easy and quick to put together, to the point that I sometimes find myself waiting for the oven to finish preheating after I’ve completed the recipe’s prior steps.

    Speedy scones

    Makes 20-24 scones

    • 2 cups all-purpose flour
    • ½ teaspoon salt
    • 2 teaspoons baking powder
    • 2 tablespoons sugar
    • 5 tablespoons just-out-of-the-fridge butter, cut into five to 10 pieces
    • 1 egg
    • ½ cup heavy cream
    • ⅓ cup dried cranberries, blueberries or other dried fruit
    • 1 tablespoon coarse-grain sugar (optional)

    Preheat oven to 450 degrees. Combine flour, salt, baking powder, salt and sugar in a food processor and mix for a few seconds. (Mixing the ingredients by hand should work too, but I’ve never had to do this recipe the hard way.) Add the butter and mix for a minute at most, such that the butter has vanished into the mixture.

    Pour the heavy cream into a measuring cup–it is more than fine if you go over half a cup–then beat the egg into the cream. Pour that into the food processor, then mix until the dough pulls away from the sides into a sticky lump.

    Dump that lump onto a well-floured surface and knead in the dried fruit until evenly distributed. Press the dough flat until it’s about ¾-inch thick throughout, then use a biscuit cutter or a small-enough glass to cut 2-inch rounds. Place them on a baking sheet. Once the leftover bits of dough are too small to cut out new scones, reshape it and repeat the process. (This will leave one leftover clump of dough that you’ll have to shape by hand; that will come out looking messier than the rest, so eat it first.) If you have coarse-grain sugar handy, scatter bits of it on top of each scone for added sweetness and crunch.

    Bake for about 10 minutes, or at least until the tops of the scones look lightly browned. Let cool on a rack, then enjoy with coffee, tea or democracy.

    Attempt 4 is from a pint of raw heavy #cream from a different dairy about 20min away. The cream itself was already thick to the point of needing to be scooped out

    The near-pint of result is incredibly thick, yellow and buttery and looks just like what we got at #HighTea in #UK

    Last week I think I mastered a #scone. Getting close to production quality!

    And this time Imma try a different #scone recipe because I didn't really like the Buckingham recipe. Maybe it was the real buttermilk (side product of the cream process) or maybe it was the baking soda. A bitterish taste.

    I wanted to make #strawberry #jam as well but those seem to be going out of season now. I guess jarred jam will be...ok.
