Durante estas celebraciones, se documenta la elaboración de unas tortas redondas hechas con higos, dátiles y miel, las cuales se repartían por igual entre plebeyos y esclavos. El elemento clave era una haba seca que se introducía en la masa; aquel que la encontraba en su porción era nombrado "Rey de Reyes" por un tiempo limitado, un cargo simbólico que le permitía dar órdenes lúdicas y disfrutar de privilegios durante la fiesta. En aquel contexto, el haba no representaba algo negativo, sino que era un símbolo de prosperidad y fertilidad vinculado a la tierra.
La transición hacia la costumbre moderna ocurrió siglos después en la corte francesa de Luis XV. Se cuenta que un cocinero de la corte quiso agasajar al joven rey introduciendo una moneda de oro (o una miniatura de lujo) en el dulce, desplazando el valor positivo hacia el nuevo objeto y convirtiendo al haba en un símbolo de "mala suerte" o en la obligación de pagar el postre. Esta estructura se expandió a España a través de la dinastía de los Borbones y, posteriormente, a México, donde el haba fue sustituida finalmente por la figura de un niño para representar la huida de la Sagrada Familia, transformando un rito agrario romano en la tradición cultural y gastronómica que conocemos actualmente.
