Pickled Carrots
Good for the gut and so easy to make: water/vinegar, salt, garlic, red pepper flakes, dill, black peppercorns (simmer then add to carrots and refrigerate)

Chicken Salad Cheese Crisp
Making a cheese crisp in the microwave is the easiest but I prefer not to use the microwave. Using a pan is something I need to get better at (sometimes sticks). This one turned out good.
