I couldn't be bothered to do any real cooking today, so I made a quick kefir based pancake batter and then had one pancake with blitzed red currants (from the freezer, and from my garden) and one with gorgonzola.

200 g plain flour
1 tsp baking powder
1 tsp vanilla extract
2 eggs, beaten
500 ml kefir
2 tbsp runny honey

Mix the wet and the dry stuff separately, then whisk the wet through the dry, rest for fifteen minutes and bake.

Big kitchen day today. @Knightky and I made red currant jam, spiced pickled beets, and lemon and red currant cake. We picked over three pounds of currants from the garden yesterday. All from one bush. Bumper crop! My gooseberries aren’t as productive this year. I only got about 1 cup of berries from two bushes. #berries #RedCurrants #Gooseberries #Canning #Preserves

Gardening news. First year I have Stockrosen and they are beautiful and I started some vinegar from my red currants. I also made red currant juice that I will turn into jelly next.
