  1. Today's baking: 2/3 whole wheat + 1/3 white bread flour loaf. The whole wheat is half spelt, half hard red wheat, climate-friendly local grain from Chimacum Valley Grainery chimacumgrain.com/ (strains developed by WSU Breadlab breadlab.wsu.edu #GoCougs! npr.org/2024/09/09/nx-s1-50020) + attempting banh mi rolls for the first time kickassbaker.com/vietnamese-br. Wonderful thing to do on a cold, rainy day in November.

  2. More of that quote from the WaPo piece:

"This may be the easiest climate solution everyone can do right now: Switch to eating more whole wheat. Eating the most nutritious part of the wheat kernel is not just healthier, ...it’s far less wasteful, shaving off 20 to 25 percent of the greenhouse gas emissions and land, water, fertilizer and pesticide use from the grains we eat..."

  3. WSU's BreadLab featured in WaPo today! Awesome. wapo.st/3XRKgmL

As a home bread baker I buy a climate blend flour from the Chimacum Valley Grainery chimacumgrain.com/ at the Olympia Farmers Market whenever it's available.

  4. @DrFerrous It is! I'm a big fan of chutneys. This fall I made a smoky green tomato chutney and a hot/sweet zucchini/summer squash chutney. The zucchini was fabulous! I'll be making that every year. moorlandseater.com/hot-spicy-c

The tomato was pretty good but not as zingy as the zucchini recipe so I might mash the two recipes up together, similar to what I did to develop my cranberry chutney.
