I have to watch some foods. I'm a type 2 diabetic and potatoes, corn, and rice tend to spike my blood glucose.
I do, however, chill starchy foods after cooking them, and that makes much of the starch resistant. Resistant starch acts like dietary fiber.
Plus purple potatoes are pretty good for insulin resistance. I make bourbon sweet potatoes for holiday dinners, and most recently I used purple potatoes:

Also: roasted 4 Stokes Purple® potatoes in air fryer. I store them in fridge and eat half of one as a sweet treat in the afternoon.
Purple potatoes (purple flesh) are a superfood.
