Wie man mir eben erklärt hat, sei das Wort Pumpernickel französisch für "Pain per Nicole" -denn angeblich hätte es ein französisches Militär-Pferd gegeben und die kaiserlichen Soldaten hätten das deutsche Brot irgendwie nicht gemocht. Ist natürlich quatsch aber lustig.

I like #Pumpernickel with cheese or spreadable sausage/paté. Adding some sliced gherkin when feeling fancy.

As for the crumbliness, I'm not sure there's a way to get entirely rid of it. Pumpernickel normally being made out of just rye, salt and water. There seems to be some difference depending on the craftsmanship.

I only know the pre-sliced ones, which might help compared to cutting them yourself?

Ich habe mal was neues versucht mit meinem #Sauerteig: Ein #Pumpernickel Brot.

Das Problem ist die lange Dauer. 12-16h gehen lassen, dann nochmal 4h, dann 16h(!) backen, dann mindestens 24 h stehen lassen.

Geschmack war jetzt schon ziemlich gut. Ob's uns den Aufwand nochmal wert ist, werden wir noch entscheiden.

Erwäge, mir regelmäßig was aus meiner Heimat in #Ostfriesland schicken zu lassen. Aber meine Mutter kann ich ja schlecht alle zwei oder drei Wochen zur Post schicken – und der Bäcker da will satte 9,10 Versandkosten[2]. 🥴

Was just about to head to an early #bedtime, and realized I should put together a dough to ferment overnight.

Have been thinking of a dark #pumpernickel batch, so I've just pulled that together. Hope the #sourdough starter isn't too aggressive overnight, as it'll be unattended for the next 10hrs.

Perhaps I'll visit in in the middle of the night if I'm awake and can muster the energy.

Hier nun Versuch 3 nach eigenem Rezept:

ausschließlich aus Roggenvollkornprodukten (ganzes Korn, Flocken, Schrot fein, mittel und grob, und Mehl), Wasser, Rübenkraut und Salz.

Mit (versehentlich🫣) sehr, sehr langer Backzeit (ca. 30 h).

Das bisher beste Ergebnis.

I made pumpernickel bagels for the first time this morning. Simple substitution of 25% of the bread flour with dark rye, plus a little cocoa for color. Definitely less elasticity to the dough when working it, but great texture once baked. #vegan #sourdough #pumpernickel #bagel #baking
