  5. Let's face it, who doesn't have a soft spot for chocolate cakes? Unfortunately, they're often considered 'guilty pleasures,' but I'm here to challenge that notion. I am beyond excited to share with you the guilt-free Nutella Zucchini Cake. No one would guess its secret ingredients: zucchini and sweet potato. Oh my, the sweet potato blended with hazelnut butter, coconut cream, cacao, and maple syrup is something out of this world. Plus, it's vegan, free of refined sugar, oil, and gluten!     It only takes 30 minutes to make. It’s a hearty, satisfying vegan chilli made with black beans, pinto beans, vegan mince (TVP), and some veggies. Yum! 😋

    ⇨ INGREDIENTS (serves 1)
    🌱50g/1.8oz (1/2 cup) TVP (textured vegetable protein)
    🌱1/4 vegetable stock cube (low sodium)
    🌱50g/1.8oz red onion (1/2 medium onion)
    🌱50g/1.8oz carrot (1 small carrot)
    🌱50g/1.8oz red capsicum (1/4 med capsicum)
    🌱200g/7oz (3/4 cup) canned diced tomatoes
    🌱100g/3.5oz black beans (1/2 cup, drained & rinsed)
    🌱100g/3.5oz pinto beans (1/2 cup, drained & rinsed)
    🌱1 tsp ground cumin
    🌱 chilli flakes, to taste
    🌱1 tsp sweet paprika powder
    🌱Chopped fresh coriander
    🌱Optional: salt to taste

    ⇨ INSTRUCTIONS
    1. Dissolve the stock cube in 1/2 cup of boiled water. Rehydrate the TVP mince by pouring the stock water over it in a bowl. Set aside.
    2. Chop onion, capsicum and carrot.
    3. In a heated non-stick deep pan, add 1 tablespoon of water and the cumin, stir. Then add onion to sauté. After a few minutes add the rehydrated mince and stir for another 2-3 minutes.
    4. Add the black beans, pinto beans, carrot, capsicum, diced tomatoes, chopped stems of the coriander, chilli flakes, the sweet paprika, and salt (if using). Mix well. Allow to simmer over low heat with the lid on top for about 10 minutes.
    5. Once done, pour in a bowl and top with fresh coriander. ENJOY!

  8. HEARTY LENTIL SALAD WITH BROWN RICE, QUINOA & GREENS 🌱

    We've called this a salad but it turns out to be a rather satisfying meal in itself.
    It’s packed with tasty goodness from the lentils, brown rice, quinoa, silver beet, capsicum, cherry tomatoes, cucumber and the delicious tahini dressing flavoured with lemon and garlic. 😋

    ⇨ INGREDIENTS (serves 2)
    🌱 2/3 cup brown rice
    🌱 1/4 cup tri-colour quinoa
    🌱 100g/3.5oz silver beet, roughly chopped (can use other leafy greens)
    🌱 2 spring onion stalks, chopped
    🌱 1 small red capsicum (bell pepper)
    🌱 1 can brown lentils, rinsed & drained
    🌱 Iodised salt, to taste
    🌱 1-2 tsp olive oil
    🌱 120g/4.2oz cucumber, chopped
    🌱 150g/5.3oz cherry tomatoes, halved
    🌱 Optional: tamari sauce, to taste
    🌱 To serve: fresh parsley

    ✴Lemon Garlic Tahini Dressing
    🌱 2 Tbsp tahini
    🌱 2.5 Tbsp lemon juice
    🌱 2-3 Tbsp water (add extra for a more runny consistency)
    🌱 1/2 tsp cumin powder
    🌱 1/2 tsp garlic powder
    🌱 Iodised salt, to taste

    ⇨ INSTRUCTIONS
    1. Rinse together the brown rice and quinoa, then cook according to packet instructions.
    2. Chop all vegetables and drain and rinse the canned lentils.
    3. Heat a nonstick pan on medium heat. Add silver beet, spring onion, capsicum and salt. Stir for about a minute until the silver beet wilts and some liquid appears, then add the lentils and mix. Heat everything for another 4 minutes.
    4. Turn off heat and add 1-2 teaspoons of olive oil. Combine well and set aside.
    5. Make the dressing: you can use a blender to mix or place all dressing ingredients in a bowl and thoroughly mix with a spoon or fork. Add less or more water to create either a creamy or runny consistency.
    6. Once the rice and quinoa are ready, place in a large bowl. Allow to cool for a few minutes then add the lentils and greens mix, cucumber and tomatoes, and mix well. Drizzle the tahini dressing on top and combine well. Taste the salad and if you like, you can add some tamari sauce at this stage.
    7. Serve in bowls and garnish with chopped fresh parsley.
