Seems like I spend a lot of my time at home encouraging the (yum!) fermented stuff - #kefir #kombucha #pickled stuff - and discouraging the (yuk!) #moldy stuff. #Mildew be gone!

Sodium percentage of daily value (Canada)

~30 grams of fermented/pickled things in jars.

American Asparagus (3 spears) 10%
Korean Kimchi 15%
Lebanese Veg 25% (2 pieces)
German Sauerkraut 28%
Greek Stuffed Olives (4) 30%

Curiously the veg salt is super noticeable compared to the others.

I absolutely love #Chinese #pickled #MustardGreens. Ever since being introduced to them as a toddler, it's been a fave cultural pickled food that I loved to eat.

Finally getting around to my next batch of #fermentation #pickled vegetables. Below the murky orange #brine is about 1.4 kilos of grated carrots and 18 grams of ginger.

#Regifting the jar of sweet #pickled asparagus via my little free library community sharing box. I dislike sweet pickled anything. I only like salty, sour or spicy type of pickled products. I always regift sweet ones. I don't want good fermented foods to be wasted. Many other folks like eating sweet pickled stuff.

Made 5 pints of pickled garlic, a quick blanch made peeling them easy.

Pickled most of the peppers too, 16 pints total on them. Cold packed. I never have good luck with cold packed things, this time it was a quantity problem. Looks like I could of had 8 pints if I hot packed them but most of them looked like full jars after the fully cooled off.

I gotta agree, a #Caesar may be the world's most perfect #cocktail.

Olives are new to me, though. @jwz occasionally posted "What's On My Bloody Mary?" and some of the ones I've run into in pubs/restaurants seemed up that alley. Dill pickle and #pickled #asparagus were some of the least-strange (and most tasty!) ones.

I made #pickled pink #onions and it was the #simplest thing ever and they are freaking fantastic on a snappy, natural casing #hotdog. Throwing some on salad with olives later.

Since my #garden sleeps in winter, #canning #pickled #veggies helps me enjoy my #homegrown #harvest throughout the year. Opened a jar of these yesterday and I am happy with the results. Instead of dilly beans, I made a brine with tarragon and oregano. Herbalicious!
