I made Baghali Ghatogh again today, Persian fava beans stew with lots of dill and eggs. It's a real favourite for us, few ingredients, quick to make and so delicious!
I use the recipe below, but with double the fava beans and garlic and two eggs (for two portions). Use 1.5 tsp of turmeric and as they mention just enough water to cover.

Today’s main meal was more like a light summer lunch but it was very yummy.

I made Korean pancakes for which I used loads of wild garlic and some spinach leaves. I made two dipping sauces, one with Gochujang, the other with mustard. I had never tried the mustard one (I had to use German mustard) but I loved it.

The salad is a Shirazi Salad, so it’s of Persian origin. For this I had to cut cucumber, tomato and a red onion really small and used mint and lemon juice (plus salt & pepper) for taste. Really easy and very refreshing.
