I have not made pea shoots before and only recently learned they are a thing. I recently bought a bag of them and thought I'd cook them since I read they don't last long.

Recipe thoughts:
I have fresh pea shoots, and I'm thinking of cooking them in a spray of olive oil with chopped red onion, diiced chayote squash, and diced lemon.
Perhaps also some diced tofu and cooked Kamut for the beans and grains part, and I still have red cabbage that I can shred and mix in at the end.
