My modified version of the peanut sauce recipe:
Put 1/2 cup peanut butter in a bowl. Add 1/2 cup boiling hot water. Stir to combine. Add 1 clove minced garlic, 2 T sugar, 2 T soy sauce, 1 T vinegar. Stir some more. Optional adds: chopped cilantro, cayene pepper or chilli oil, and salt, to taste. (I didn't add any of these, I was going for simple as possible)
* This comes out thin enough to pour; if you want it thicker add less hot water. Just titrate til you got the consistence you want.

I had some Fix and Fogg peanut butter that was the wrong texture for me so I found a basic peanut sauce recipe to put it into and it came out pretty good.
The peanut butter in question: Fix and Fogg crunchy. It is like smooth peanut butter with chopped peanuts in it. Not what I wanted from 'crunchy peanut butter.'
My observation of NZ peanut butter brands: Fix and Fogg has a smooth peanut butter bias (their crunchy is smooth in disguise) and Pic's has a crunchy peanut butter bias (their smooth is still a little crunchy)

These Vietnamese-inspired spring rolls are packed with chili garlic shrimp, chicken ramen, crisp veggies, and topped with furikake. Served with creamy peanut sauce—fresh, spicy, and full of texture! #SpringRolls #ShrimpRecipes #VietnameseFood #FreshRolls #RamenRecipe #HealthyLunch #EasyMeals #PinterestFood #FusionRecipes #PeanutSauce

OK, Mastodon chefs and cooks:
What’s your best recipe for peanut sauce?
I know, it’s not rocket science, it’s mostly peanut butter, but what spices, what oil and/or vinegar, sugar? (brown or white?), soy sauce? Sriracha? (I have non-spicy eaters, which kills me)
I’ve been doing it for a while, so mine is pretty good, but not wow. I’d love to make it better.

@greyor #tofu and (imho especially) #tempeh also go really well in an #Indonesian #GadoGado, which is basically whatever (raw) veggies and fried protein you like, covered in a sort of #sateh- / #peanutSauce: https://www.ilovevegan.com/vegan-gado-gado-salad/

@paul
https://en.m.wikipedia.org/wiki/Smoke_point#Temperature might come in handy to see if the desired oil has a high enough #smokePoint.
https://goodfries.eu/en/rules/ suggests a temperature between 160°C and 175°C.
Maybe #peanutOil?I don't think it satisfies your 'unhealthy' requirements, but to me #Indonesian #GadoGado very much counts as #comfortFood: https://www.lazycatkitchen.com/vegan-gado-gado-salad-tempeh/
(And I'm not even #vegan)Usually I'm lazy though and skip the #tempeh and just toss #peanutSauce over raw, cut/diced/slices veggies.

This slice of #polarbrød with a slice of #svinestek (roast pork) and #svinekam (smoked pork loin), drenched in #peanutsauce #satehsauce and topped with fried onions was lovely.
