After a long break, and inspired by @stojg's recent pâte fermentée adventures, I have taking up regular baking again. Here's a snap of today's freshly baked pane casereccio (bread of the house) ... the crust was still crackling as I took this photo. I used a blend of mixed grain and strong white flour to bake this loaf, loosely based on a 'no knead' recipe from American baker Suzanne Dunaway.

Il sacchetto, riutilizzato, conteneva alcuni panini alla segale con semi vari, prodotti da mia figlia, in famiglia abbiamo una certa pratica con il lievito madre 😃
La boulangerie utopiste si trova ad Avignone, nelle foto i due lati principali del sacchetto , sui fianchi da una parte lo spartito di Bella ciao e dall'altra il testo in italiano. Chapeau! 🫶

Per me, il pane è importantissimo. Molto più di altri cibi. La prima cosa che valuto è il profumo: il pane deve profumare di pane. E già qui bisogna dire che di pane che profuma di pane se ne trova pochissimo. Poi la crosta: se cotto a legna, qualche parte deve essere più scura. Quasi bruciata. Per finire, consistenza e sapore. Una bella alveolatura, sapore quasi acido per il lievito madre.

Intanto, nella categoria #ProblemiDiChiPanifica, è passato troppo tempo dall'ultima volta che ho fatto il mio #pane preferito, e non mi ricordo se le dosi appuntate sulla stampa della ricetta (che sono già più alte delle originali) sono per due o quattro pezzi.
E ho abbastanza lievito madre per raddoppiarle. E non sono sicura che l'impastatrice regga 2.4 kg di farina. Ma quello è un problema per domani.
Un altro problema per domani: sono sicura di non avere abbastanza pezzi di stoffa bianca in cui avvolgere 8 pezzi a lievitare, nel caso io abbia per sbaglio quadruplicato la dose. (e le mie scorte di stoffa sono altrove)
