Not looking to start a culinary war, but when a dish is fundamentally about one ingredient, that ingredient matters. Paella and risotto are not the same dish, nor do they follow the same culinary logic. They traditionally use different rice varieties, selected for different textures and cooking methods. The Mediterranean, thankfully, spans many countries and cultures, and its cuisines are every bit as diverse.
