I've been drinking tea more often lately instead of coffee and trying different types.
My latest ones are Darjeeling and Oolong. The Oolong is my favorite of those two, kind of fruity but not as strong of a flavor as Earl Grey. -

And I mean high-quality oolong only. Seasoning a teapot is critical.

I emailed white2tea about how to store their oolong that has been pressed into bricks. I've had a handful of sour teas over the last year or so, and I'm thinking about it a lot whenever I open an oolong. The white2tea oolong ofc doesn't come in a vacuum sealed bag. I realized after this exchange that I should probably drink this tea right away before opening or buying any more oolong.
Me: How do you store bricks of oolong?
Him: Personally, I would keep them the same way as raw Puer, but it depends on your storage/goals. If you like you could also keep them very dry and sealed to maintain more aroma, whereas I’d prefer to have them more smooth over time.
Me: Ok. You don't worry about this tea becoming sour?
Him: Most any question like that will depend greatly on a lot of factors like your goals/location/preferences. Aging tea can have a lot of out comes. -

At the parent's for Thanksgiving, and we are grandpa style all week.

How is it possible for the tea tree to produce so many subtle flavors and aromas. The oolong we are having today has the aroma of a wild honey, sweet but also floral, but the taste has a hint of hot rocks a mineral taste, and of course the bitter and lightly woody taste of the tea itself.
This isn't an herbal tea. HOW does this happen?
