Since it's #tomato season, I decided to try the simple, humble "macaroni & tomatoes" dish, but used #gemelli pasta instead. It came out delightfully delicious!
I used canned #sanmarzanotomatoes mixed with fresh garden grown tomatoes. Plus lots of #butter. 😋😋Proud of how this turned out! Topped with fresh grated parmesan & paired with a chilled glass of New Zealand Sauvignon Blanc, I think I did #MeatlessMonday well! 👌👌

Made vegan chili from the Vegan Instant Pot Cookbook by Rainbow Plant Life (Nisha Vora)! Omitted the oil and added spinach (cooked it along with the mushrooms and bell pepper so that most of the water was cooked off).
