  1. Tried a new no knead bread recipe, I think I let it rise too long and didn't wait long enough before putting them in the oven.

    It's much less "fluffy" than expected. But it's delicious

    (30% whole wheat, 70% T60 flour, with fresh yeast).

  5. Today's bake: no-knead cheese baps.
    Very moreish but I will freeze six of them anyway. (I inhaled two when they were still warm, not even bothering to put anything on them.)

    340g water
    12g fresh yeast
    500g strong white bread flour
    10g salt
    100g grated Cheddar cheese, plus 100g for the topping
    1 beaten egg for egg wash

    I read this book. I would suggest "Flour Water Salt Yeast" by Ken Forkish. IMHO the key to these "No Knead" breads a long bulk fermentation, as in 8 plus hours depending on room temp!
    The above book should be at the library.

  11. One sourdough bread, and one yeast dough bread sprinkled with sesame seeds. Fresh out of the oven, still crackling as they cool. Both are good, but the sourdough loaf just smells soo good and has so much flavour. 🤤

  12. I have spent the past half hour or so looking reading variations on no-knead bread, when really, I *love* kneading dough. Love watching it transform beneath my hands. Love the rising cycles. Why would I give that up?

    And when I do try a new quick or no-knead recipe I am always disappointed. But it's been a long time since I made the Bitterman no-knead I just might try it again someday soon. For comparison.

  13. So who did invent no-knead bread? Bitterman and Lahey are willing to claim all credit. But Suzanne Dunaway came before them. I wonder if Lahey just had a better PR machine/skills. Still, it is a pity that Dunaway's contribution is not well recognised.

  14. CW: Bread, anxiety

    I finally made #bread last weekend for the first time in a couple of months. I use a recipe that calls for a double batch, but freeze the second loaf after bulk rise and shape because we can't eat that much at once. I never have a plan for how to thaw and proof the frozen dough. I took this out of the oven about 3 or 4 hours before I put it in the oven and was convinced it wouldn't come out, but happily it did!

    Dieses Brot ist auch für Anfänger absolut leicht nachzubacken.
