After a long break, and inspired by @stojg's recent pâte fermentée adventures, I have taking up regular baking again. Here's a snap of today's freshly baked pane casereccio (bread of the house) ... the crust was still crackling as I took this photo. I used a blend of mixed grain and strong white flour to bake this loaf, loosely based on a 'no knead' recipe from American baker Suzanne Dunaway.

I've been experimenting with #noknead #bread #baking.
Very satisfied with the results.
Ten minutes of active work, which is less than it takes to bike to the local bakery in these snowy times, to get a delicious loaf of bread.
After three bakes, same recipe but different loaf size and scoring placement, I've discovered that my oven runs cooler than it supposed to. I've adjusted for the difference. -
Finished baking. And I have to say, this is the best bread I have baked in a long time.
Delicious, healthy and so damn easy to bake.
Next time, I add a little more flour to it to make baguette out of it instead. Or small buns to have sandwiches.

Mixed till it was smooth, let it rise for 40 min.
Flipped over the dough a few times (it's very watery), then added it to forms with some seeds under it (new thing I'm trying

#baking question:
How late in the process can I upscale #noknead dough by mixing in more flour, water and salt? I'm thinking 1-2 hours before baking should do it, followed by stretch and folds at 15-30 minute intervals to work them together.
The question is from a practical perspective. Let's say I've set a pizza dough in the morning, and only discover later in the day that we would like to have some guests so I need more dough. How flexible can I be?

Can't remember when I decided to refrigerate this dough mass, but I pulled it out today to let it warm. 400g flour, 25% dark rye, hydration at 75% IIRC. The weird thing is I sprayed the container & dough mass with Pam. Was going to bake it like a day later, but life intervened, so it went in the fridge. ¯\_(ツ)_/¯ It still looks like it's fermenting. I doubt I'll punch/stir it down again b/c of the Pam. #cooking #baking #bread #NoKnead

Do you #bake #bread in a dutch oven and find the bread is stuck in the pot sometimes? Don't fret, read on for the fix.
Do NOT jam tools down the side of the bread and try to tip it out while it's scorching hot! You'll crack up the crispy crust, and you might scratch your expensive dutch oven. You might also rip off big parts if the crust.
Instead, just wait a little - or a lot.

Today's bake for the two of us. Mrs. GF has the 50/50 white/wholemeal (bit like old fashioned Hovis), mine are the mix of white/wholemeal/Cotswold Crunch (from #matthewscotswoldflours) and a bit of spelt, with pumpkin & sunflower seeds.
I use a really simple #noknead method, just stretch & fold in the bowl.
I slice one of each loaf and freeze in ziplock bags, the other keeps well in the wooden bread bin for a week or so.

@qwertystop @katwylder I let it rise overnight and then some. It doesn't look like the pictures--the top has these little crusty dry bits on top, it's not smooth. I'm in a dry climate, should I have added more water???? I only covered it with a towel to rise. It's doing a brief rise (proof?) now and then I'm going to slash the top and to pop it in the dutch oven 😬

My last attempt at homemade bread baked into a glutenized brick. And next week me and my mom are making some more traditional bread (with kneading)...I sure hope this recipe breaks my curse!
