I shouldn't be surprised but after extensive phone calls to various soy bean suppliers and growers it seems soy bean knowledge extends as far as "soy beans" and not to the wide variety of strains known elsewhere. To be fair there are a few strains in Australia, but unsurprisingly they're more about yield than function and most get pulped into tofu and soy milk or animal feed.

    My last 2 batches of #Natto have shown that in pressure cooking the beans there must be mere microseconds between too firm beans and fall apart slop beans.

    It is a vitamin most people do not get. It can prevent the build up of arteriosclerosis, even for people with low cholesterol and a genetic predisposition to arteriosclerosis. It also does a lot to promote bone health and the health of gums.

    There is only 1 vegan source with significant amounts. Natto. Natto is fairly disgusting and brands that are reliably vegan are expensive.

    Good news: you only need about 12 grams a day - about 1 heaping tablespoon. A $5 3.5 ounce container can last you a week.
