You ever have one of those days where you try something new in the kitchen, and end up just hitting it OUT OF THE PARK somehow? That was today for me.
I had a ton of lentils in the fridge that needed eating up, so I processed them into veggie "meat" balls, fried them up, and had them with leftover naan and a little plain yogurt. The bowl on the bottom here has a kale/cabbage salad with ginger dressing, cut up halo mandarins, and pecans from my tree outside. It was amazing.

Homemade #naanNone of it difficult. About 1hr for first two and aside from waiting 90 mins for dough to prove, naan bread is about 20 mins actual work.
Swap yoghurt for something plant-based and it can be #vegan

Indian food is the perfect runner's nutrition. 😅🏃 The run today felt rather mixed. 10° warmer than Friday and dressed way too warm. I don't cope well with such temperature changes.

Am co-owner of my county's vegan group on facebook (322 peeps!). Nearby group invited my partner & I to vegan supper club, Mediterranean themed. Hot damn - delicious & fun. I made naan, daughter made roast garbanzos w/ fried shallots & rosemary. KILLER recipes exchanged, including a caramel made from dates.

Well, I finished cooking them. There were six in total, and three of them puffed up nicely. The other three stayed flat, but even so, I'm sure they'll taste fine. It should be good for lunch for the next few days.

Well, I'm trying to make vegan salt-free naan bread. I'm following this recipe, but omitting salt, and substituting ground flax for egg (also using some water mixed with soy powder for a bit of milk).
I've done it before with mixed results (it turned out kinda edible). So, I'll see how it turns out this time. Right now the dough is sitting around, with the hope that it rises.
