Culinary cross-pollination

So I'm standing at the stove making a pot of govedji gulyás. And I've just chopped my onions, and we've got most of a bag of red onions left but I'm thinking to myself that we need yellow or white onions back on the shopping list because we have one very small white onion left. And the next thing I'm aware of is a background thought process popping up and wondering, if there are red, yellow and white onions, shouldn't there also be blue-white onions? (Presumably supergiant ones.)

And then a little later I find myself wondering what kind of flavor bae leaves would impart...
