  1. Para mi, el reservarme este tiempo para poder centrarme solo en una cosa es terapéutico.

    Hasta lo he hablado con mi psicóloga y me ha dicho que es algo similar a la meditación: Al forzarte a centrarte en una única tarea silencias (o amortiguas) el resto de pensamientos... y eso ayuda a que tu mente esté más despejada.

    En el día a día tienes decenas de pensamientos, todos compitiendo por tu atención, con diferentes grados de prioridad. Si puedes reservarte un tiempo en el que puedas amortiguar todo ese ruido le estás dando un descanso a tu mente.

    Repito: a mi esto me funciona. Esta aproximación tiene sentido para mi. Tal vez para vosotros no, pero si es así espero que podáis reservaros ese tiempo de forma periódica.
    Avisad de que no os molestéis, os ponéis música y os centráis.

    I love the idea of 'mise en place' when cooking. It feels organised and structured and therefore a lot less stressful. It makes cooking a meal so much more enjoyable. A place for everything, and everything in its place. Tonight I’m making chicken satay and while the sauce and the rice are store-bought and just need to be heated through, that doesn't mean you still can't do mise en place.

  5. It's spring planting season in Georgia, which means I don't have as much time on here as I'd like. But on the weekends, I still like to get in the kitchen and put things together. Here's a take on Salad Niçoise, using found ingredients from the fridge/freezer: mahi mahi for the seafood, some hard-boiled eggs with anchovy mince, and anything else I though would work - alas, no green beans! The lemon vinaigrette was a good match.

  6. A staple around here during the summer: roasted, smashed, golden Yukon potato salad.

    Here, with a creamy yogurt / sour cream / mayo dressing - but I've also used a lemon vinaigrette and it was just as delicious.

  7. What's cooking? It's Seafood Sunday around here tonight. I've used Croaker, Grouper, Sea Bass and Mahi Mahi for this dish, equally well. Served with some sautéed greens and saffron risotto on the side for all that delicious tomato sauce. Ingredients as pictured: tomato sauce is made with the passata and other ingredients, and the fish is submerged in the sauce to cook in a hot oven for 15 minutes.

  8. I need to make this more often. So easy and delicious: pasta with broccolini, garlic, feta cheese, lemon zest & juice, and fresh herbs. The sauce comes together with lemon juice, a dash of white wine, some pasta water. We do a lot with pasta in this household, often with no recipe: "So, what's in the fridge?"

  9. Mise en place. Condiments to be served with lemongrass-ginger and coconut-chicken curry. One of my favorite winter meals and fun to serve to guests. Included here is a fresh coriander-mint chutney and a lemongrass-ginger paste which can be added to individual bowls according to taste.

  10. Hot mulled wine, anyone? With 9 degree temps predicted for Christmas Eve, I'm thinking the outdoor bourbon tasting may need to be switched to an indoor hot mulled wine experience.

    And besides... I can always throw some bourbon into the mulled wine.
