Roz bel khalta is one of Egypt’s festive rice dishes: rice scented with cinnamon, cardamom and cloves, folded with browned gizzards, toasted nuts and plump raisins.
Its name means “rice with a mixture,” and the contrast is the appeal — savory meat, warm spice, sweet fruit and crunchy nuts, often served alongside roast lamb, beef or poultry.
