    Cette fois donc, j’ai mis de la poudre de cannelle, et je pense faire la délicate et heureuse bêtise d’enrober le dessus de chocolat fondu 🫣

    Il faudra que je m’intéresse à la taille, aussi. Je me dis qu’un peu plus petit ça peut ne pas être mal.
    Déjà je pense qu’elle vont moins se résorber en petite boule comme dimanche, et garder quelques pointes.

  5. I’m making Italian meringue buttercream, which is always an act of faith. First you make a meringue, with a boiling sugar syrup. It looks great, all white and puffy. Then after it cools, you add the butter, bit by bit, and the meringue collapses into a lumpy, wet, soupy mess in the bottom of the stand mixer. It’s awful.

    But then you just crank up the mixer to high and let it keep going. Five minutes, maybe. Ten. Or more. (That’s what I’m doing now). At some random moment an emulsion forms and suddenly the soupy mess stiffens into a smooth, firm, creamy buttercream — the best of them, in my opinion.

    So far I’ve never had to wait more than 20 minutes for the miracle to occur, but it’s still nerve-wracking. Meringue failure is not pretty.

    (Yeah, there are much easier buttercreams I could make, but most of them are way too sweet for my tastes.)

  7. i made the Bûche de Noel this year!! lots of nerve-wracking firsts for me:

    first #genoise, first #ganache (which separated and then got too hard when it set), first #swissroll (didn’t get much of a roll tbh) and first #meringue (unfortunately not pictured… it ultimately ended up fine but i didn’t have time to get the mushrooms assembled)
