"He visited restaurants with a black surgeon’s bag containing equipment that included a scale, magnifying glass, and a thermometer to assess the steaks. When he found one that met his standards for flavor and tenderness, he granted it an award. The steak at Murray’s that passed Dreicer’s scrutiny to earn the Silver Butter Knife distinction was the 28-ounce strip sirloin. Then Murray’s did something nobody else did."
