You ever have one of those days where you try something new in the kitchen, and end up just hitting it OUT OF THE PARK somehow? That was today for me.

I had a ton of lentils in the fridge that needed eating up, so I processed them into veggie "meat" balls, fried them up, and had them with leftover naan and a little plain yogurt. The bowl on the bottom here has a kale/cabbage salad with ginger dressing, cut up halo mandarins, and pecans from my tree outside. It was amazing.

We had a place like that near us! They made the BEST meatball subs - and I love a good meatball sub. You might even call me a meatball sub snob.

[I should note that although I call them subs now, where I grew up we called them "grinders". And where I went to college, we called them "hoagies". Make of that what you will!]

That means large, tender, relatively mild meatballs - not too much garlic, just the right amount. The sauce should have a good tomato flavor not too sweet or bitter in itself, and include plenty of tomato seeds for those delightful jolts of bitterness. The roll should NEVER be from a supermarket; it should have a bit of a crust, but not be so crusty as to be difficult or painful to bite into. The bread itself should absorb the sauce when the sub is heated and become almost mushy. Ideally the rolls are baked in-house. I'm agnostic when it comes to braided or seeded rolls, as long as they're made well.

I don't eat cheese, so I can't speak to that part of the experience.

Basically a regular pizza joint is unlikely to make a good meatball sub. Most of those places are Greek, and while their pizzas can be good their meatballs are generally small and relatively hard. The sauce is often questionable at best.

Anyway, the one place near us that made great subs closed without warning. We were heartbroken. I've been looking for a replacement ever since. Unfortunately the best I've been able to find so far is about 50 miles away, and they are a bit unpredictable; sometimes they're great, sometimes only so-so.

The quest continues.
